Rosti (Roosh-tee)

A cross between a potato latke and hash browns, rosti is a fried potato dish from Switzerland
- 1 lb. yukon gold potatoes, peeled and shredded
- 1 3/4 t. all-purpose flour
- 1/2 t. salt
- 3 oz. Gruyere cheese shredded
- 1 bunch green onions, white and light green portions thinly sliced , and dark green portion thinly sliced for garnish
- Freshly ground pepper, to taste
- 4 T. (1/2 stick) unsalted butter
Easy Deviled Eggs

- 12 hard-cooked eggs
- 1/4 cup MIRACLE WHIP Dressing
- 1/4 cup GREY POUPON Dijon Mustard
- 1/4 tsp. paprika

- 2 tablespoons butter
- 1/2 cup orzo pasta
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup uncooked white rice
- 2 cups chicken broth
Shrimp Sonoma

Excellent!
- 1 oz. dried tomatoes without salt
- 1 1/2 lb. large shrimp(use deveined shrimp to save time)
- 2 T. lemon juice
- 2 T. olive oil
- 1/2 t. salt
- 1/2 t. crushed red pepper
Fish Tacos with Corny Guac

In a large bowl, combine the first 7 ingredients
- 3 tablespoons EVOO or canola oil
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon granualted onion
- 1 1/2 pounds tilapia, mahi-mahi or other sustainable white fish, cut into 1-inch strips
- Salt and pepper
- 1/2 small red onion, finely chopped
- 1 large jalapeno or 2 serrano chile peppers, seeded and finely chopped
- 2 fresh lemon juice
- 1 clove garlic, grated or pasted
- 2 ripe avocados, preferably Haas, halved and pitted
- 1 ear corn, grilled or roasted, kernels scraped, or 1 cup frozen fire-roasted corn kernels, such as Whole Foods' 365 brand, thawed
- 1 plum tomato, seeded and finely chopped
- 2 chopped cilantro
- 12 - 16 small (6-inch) corn tortillas
- Shredded iceberg lettuce
Roast Chicken with Cauliflower and Sweet Potatoes

Directions Preheat oven to 450 degrees
- 1 whole chicken, about 4 pounds
- 3 tablespoons extra-virgin olive oil, plus more for rubbing
- Coarse salt and freshly ground pepper
- 3 sweet potatoes (about 1 1/2 pounds total), preferably garnet or jewel, scrubbed and each cut lengthwise into 4 wedges
- 1/2 head cauliflower (about 1 pound), broken into 3-inch florets
- 2 ounces pancetta, cut into a 1/4-inch dice (about 1/3 cup)
- 1 1/2 teaspoons minced fresh rosemary
- 3 tablespoons capers, drained
