Chicken Noodle Casserole

- 2 t. vegetable oil
- 1 lg. green pepper, chopped
- 1 med. onion, chopped
- 1 28 oz. can crushed tomatoes
- 1/2 t. ground chipotle chile
- 1 t. ground cumin
- 1 lb. boneless, skinless chicken-breast halves, cut into 1/2 in. chunks
- 12 oz. wide egg noodles
- 1 c. packed fresh cilantro leaves
- 1/2 c. light sour cream
- 1 c. shredded Mexican-blend cheeses
Au Gratin Potatoes

- 10-12 medium red potatoes(white potatoes will work also--4-6 medium)
- 1/4 - 1/2 lb. Velveeta cheese, loosely grated
- 1/2-3/4 pt. whipping cream
- Salt
- Pepper
- Dried chopped onion
- Onion salt (all of the above seasonings to taste)
Hardy Casserole

- 1 ripe avocado, chopped
Mango-Rum Cocktail

- 3 T. balsamic vinegar
- 1 T. soy sauce
- 2 T. firmly packed light brown sugar
- 2 garlic cloves, minced
- 2 T. chopped fresh rosemary
- 1/4 c. extra-virgin olive oil
- 2 lb. boneless beef sirlion, cut into 1-inch pieces
- 2 red bell peppers, seeded and cut into 1/2 inch strips
- Sal and freshly ground pepper to taste
- 1 bunch green inions, cut into 1-inch pieces
Coconut Cake

This recipe calls for 8 eggs, divided, with 4 yolks in the cake, and the remaining 4 in the custard
- Cake:
- 8 eggs, separated
- 1 tsp. vanilla extract
- 1 tsp. coconut extract
- 1 c. cake flour
- 1/4 tsp. salt
- 1/2 tsp. cream of tartar
- 1 1/4 c. sugar
- 2 c. coconut flakes or chips, sweetened or unsweetened
- Coconut Custard:
- Makes about 3 cups (enough for a 4-layer cake)
- 4 egg yolks
- 1/3 c. cornstarch
- 3/4 c. sugar
- 1/4 tsp. salt
- 1 (13.5- to 14-oz.) can coconut milk (not low-fat or lite)
- 1 1/4 c. milk, or enough to equal 3 cups with the coconut milk
- 1/2 tsp. vanilla
- Whipped Cream Frosting:
- Makes about 5 cups (enough for 2-layer cake).

- 2 large baking potatoes (about 1 pound), cut into 1/4-inch strips
