Net Pratt's French Onion Soup

This recipe is in 3 parts
- Part III:
- Part 1: Onions
- 3 lb. onions, thinly slice--make lots!
- 5 T. butter
- 1 t. oil
- 5-6 T. flour
- Part II: Stock
- 2 2 1/2 quarts beef stock-homemade if you wish OR 6-7 cups beef bouillon plus 2 cans beef consumme
- Freshly ground pepper and salt to taste
- French bread slices for top of oven-proof soup bowls
- May add 3 T brandy or cognac
- Grated swiss, mozzarella or provolone--some people like cheddar
Slow-Smoked Rib Roast

To make the garlic rub, in a small dish, use the back of a spoon to mash together the garlic and salt
- 4 large garlic cloves, finely chopped
- 1 1/2 tsp. coarse sea or kosher salt
- 1 1/2 tsp. freshly ground coarse pepper
- 2 Tbs. chopped fresh rosemary
- 2 Tbs. chopped fresh thyme
- 2 Tbs. Dijon mustard
- 1 standing 4-rib beef roast, 8 to 10 lb., trimmed of excess fat
- 2 to 3 handfuls mesquite chips, soaked if using charcoal

Baked Rigatoni With Broccoli

- 8 oz. rigatoni
- 1 1/4 lb. broccoli, stems and florets separated
- 3 T. unsalted butter, plus more for greasing casserole
- 3 T. flour
- 2 c. hot whole milk
- 3/4 c. freshly grated Parmesan cheese
- 1/4 t. salt, or to taste
- Freshly ground black pepper
- 1/4 t. cayenne pepper
- 8 oz. mozzarella cheese, diced
- 1/4 c. dried breadcrumbs
- Olive oil
Spanish Chorizo Stew

In 8 quart saucepan, cook chorizo, carrots and onion in oil for 5 minutes or til onion begins to soften
- 4 oz. Spanish chorizo, thinly sliced into half-moons
- 2 large carrots, chopped
- 1 medium onion, finely chopped
- 1 T. olive oil
- 1 can(15 oz.) chickpeas, undrained
- 2 c. chicken broth
- 1 28 oz. can crushed tomatoes
- 12 oz. spinach, torn
Shortcut Lasagne

This is an old recipe taken from the Better Homes and Gardens Meat Cookbook
- 1 lb. hamburger
- 1-1 pound 13 oz. can tomatoes
- 1 8 oz. can tomato sauce
- 1 envelope spaghetti sauce mix
- 1/4 t. garlic salt
- 1 c. cottage cheese
- 8 oz. pkg. sliced mozzarella cheese
- 8 oz. lasagne noodles, cooked according to pkg. directions
- 1/2 c. grated Parmesan cheese
Chocolate Cherry Thumbprints

- 1 cup Butter, softened
- 2 cups Sugar
- 2 Eggs
- 2 teaspoons Vanilla
- 3 cups Flour
