Pumpkin Apple Streusel Muffins

In large bowl, combine first five ingredients; set aside
- 2 1/2 c. all-purpose flour
- 2 c. sugar
- 1 T. pumpkin pie spice
- 1 t. baking soda
- 1/2 t. salt
- 2 eggs, lightly beaten
- 1 c. Libby's Solid Pack Pumpkin
- 1/2 c. vegetable oil
- 2 c. peeled, finely chopped apples
Brussel Sprouts and Basil Bowties

- 1/4 c. olive oil
- 3 cloves garlic, finely chopped
- 1/2 t. salt
- 1 1/2 pounds chopped, sliced veggies--1/2 pound onions, 1/2 pound mushrooms, 1/2 pound brussel sprouts
- 1 t. finely chopped rosemary
- 1 pound cooked bowtie pasta
- 1/4 c. Aged Gruyere cheese, shredded
- Garnishes to taste..fresh basil, lemon juice, black pepper

- 2 capfuls of cheddar popcorn seasoning
- Cooking spray
- 4 quarts popped popcorn
- 1 cup brown sugar
- 1/2 cup Karo® Light OR Dark Corn Syrup
- 1/2 cup butter OR margarine
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda

Potato-Cauliflower Gratin

Cook the cauliflower Preheat an oven to 400ºF
- 2 cups heavy cream
- 3 garlic cloves, crushed
- 2 fresh thyme sprigs
- 1 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1 small head cauliflower, separated into florets
- 2 lb. Yukon Gold potatoes, peeled and thinly sliced
- 2 cups shredded Gruyère cheese
- 1 cup grated Parmigiano-Reggiano cheese
- 1/4 cup fresh bread crumbs

Hot and Cheesy Chicken Casserole

Directions 1. Preheat oven to 350 degrees F
- 3 cups chopped cooked chicken
- 1 14 ounce package frozen broccoli florets
- 2 cups cooked rice*
- 1 1/2 cups frozen peas
- 1 10 3/4 ounce can condensed cream of chicken soup
- 1 10 3/4 ounce can condensed fiesta nacho cheese soup
- 1 10 - 10 1/2 ounce can diced tomatoes and green chilies
- 1/2 cup milk
- 1/2 teaspoon crushed red pepper (optional)
- 1/2 cup shredded cheddar cheese (2 oz.)
- 1/2 cup shredded mozzarella cheese (2 oz.)
- 1 cup crushed rich round crackers

- 1 bunch broccoli, about 1 1/4 lb., washed and trimmed
- 2 c. sliced onions
- 5 T. butter
- 7 c. chicken broth, divided
- 1 t. dried leaf oregano, crumbled
- 1/4 c. flour
- 2 T. Dijon mustard 1/8 t. pepper
- 1 c. milk
- 2 c. shredded Sharp Cheddar cheese
Edamame Succotash with Shrimp

Edamame stand in for lima beans in this one-dish meal
- 1 1/2 c. frozen, shelled edamame
- 3 bacon slices
- 1/2 c. chopped celery
- 1/4 c. chopped red onion
- 3 garlic cloves, minced
- 1-2 jalapeno peppers, split lengthwise and cut crosswise into thin strips(optional)
- 2 c. fresh or frozen corn kernels(about 2 ears)
- 3 T. white wine
- 1 ob. medium shrimp, peeled and deveined
- 1/2 t. salt
- 1/4 t. freshly ground black pepper
- 2 T. fresh parsley
