Maple Bacon Cupcakes

Preheat your oven to 350 degrees
- MAPLE BACON CUPCAKES
- 2-3/4 cups cake flour, sifted
- 1 tablespoon baking powder
- 1/2 cup vegetable oil
- 4 cups maple syrup, reduced down to 2 cups
- 3 eggs, room temperature
- 1 cup milk
- 3 teaspoons natural maple extract
- 5 strips applewood bacon, cooked and chopped
- 4 cups confectioners' sugar
- 6 tablespoons butter
- 4 tablespoons maple syrup
Jalapeno Popper Stuffed Pork Tenderloin

Preheat oven to 350°F. Line a baking sheet with aluminum foil
- SERVES 6 | ACTIVE TIME 30 Min | TOTAL TIME 1 Hours 5 minutes.
- 1 1/2 pound pork tenderloin
- 1/2 (8 ounce) package cream cheese, softened
- 1/2 teaspoon New Mexico Chile Powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- 1/4 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/4 cup bacon crumbles (or 4 strips of bacon precooked and crumbled)
- 1/2 cup shredded Colby Jack Cheese
- 2-3 jalapenos, (seeded, deveined and diced)
- salt and pepper to taste

Montana's Smoke House BBQ Sauce For Ribs

- 2 cups ketchup
- 2 cups light corn syrup
- 2 cups white vinegar
- 2 cups yellow mustard
- 1 cup brown sugar
- 2 cups water
- 5 oz can tomato paste
- 1 tbs kosher salt
- 2 tbs garlic salt
- 2 tbls granulated garlic
- 2 tbls cayenne
- 2 tbls ground pepper
Potatoes au Gratin

- 2 tbs butter, softened
- 6-7 small potatoes, scrubbed clean
- 1/2 cup whole milk
- 1 +1/2 cup heavy cream
- 2 tbs flour
- 3-5 garlic cloves, minced
- 1 tsp salt
- pepper
- 1 +1/2 cups shredded sharp cheddar (I used white cheddar)
- fresh chives, thinly sliced

- 2 cups heavy cream
- 2 sticks (16 tablespoons) butter
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper

- 4 jalapenos, sliced very thin

Separate crescent roll dough into eight triangles and place on an ungreased 12-in
- 1 tube (8 ounces) refrigerated crescent rolls
- 1 pound bulk pork sausage
- 1 can (4 ounces) sliced mushrooms, drained
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1 cup (4 ounces) shredded cheddar cheese
New Orleans Jambalaya

Instructions Place the chicken in a bowl with 1 tablespoon of the Creole seasoning
- For the Creole Seasoning:
- 2 tablespoons butter
- 1 pound chicken breast, cut into bite-sized pieces
- 1/2 pound andouille sausage, sliced in 1/4 inch slices
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 1 stalk celery, diced
- 1 cup white long grain rice
- 1 (14.5 ounce) can diced tomatoes
- 2 tablespoons Creole seasoning (see recipe below)
- 1-2 teaspoons hot sauce
- 1 teaspoon Worcestershire sauce
- 2 cups chicken broth
- 2 bay leaves
- 3/4 teaspoon salt
- 1/2 pound medium raw shrimp, deveined (optional: tails removed)
- 4 green onions, thinly sliced
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons sweet paprika powder
- 1 1/2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon cayenne pepper
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Instructions
- Combine all the spices in a coffee or spice grinder. Grind to a fine powder and store in an airtight jar until ready to use.
