Stuffed Mushrooms

- 2 cups Stove Top Stuffing Mix for Chicken in the Cansiter
- 1 cup hot water
- 16 large mushrooms (about 1 lb.)
- 3 Tbsp butter or margarine
- 1/2 small green pepper, finely chopped
- 1/2 small red pepper, finely chopped
- 2 Tbsp. butter or margarine, melted
Louisiana Crab Dip

1. In a bowl, combine the cream cheese, horseradish, Worcestershire and hot pepper sauce; mix well
- packages (8 ounces each) cream cheese, softened
- 2 tablespoons prepared horseradish, drained
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon hot pepper sauce
- 2 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed
- 1 medium onion, chopped
- 1 tablespoon dry bread crumbs
- 1/8 teaspoon paprika
- Assorted crackers
Southern-Style Cornbread Stuffing

Preparation In a large bowl, combine crumbled cornbread,dried white bread slices and saltines; set aside
- cornbread (see below)
- 7 sl oven-dried white bread
- 1 slv saltine crackers
- 8 T unsalted butter
- 2 C celery, chopped
- 1 ea onion, chopped
- 7 C Chef’s Line™ classic chicken stock
- Monarch® kosher salt
- freshly ground black pepper
- 1 t Cross Valley Farms® sage
- 1 T Monarch poultry seasoning
- 5 ea whole eggs, beaten
- Cornbread Ingredients
- 1 c self-rising cornmeal
- 1/2 c self-rising flour
- 3/4 c Glenview Farms® buttermilk
- 2 ea whole eggs
- 2 T Optimax® multipurpose oil
- Preparation
- Combine all ingredients and mix well. Pour batter
- into a greased, shallow baking dish. Bake in a 350º
- oven for approximately 20 to 25 minutes. Remove
- from oven and let cool.
Cheesy Bacon Ranch Roasted Potatoes

Preheat oven to 400 degrees
- 6 slices bacon, cooked and crumbled or chopped it bits
- 2 lbs russet potatoes, scrubbed and rinsed, diced into 3/4-inch pieces (about 7 cups)
- 2 1/2 Tbsp olive oil
- 1/2 tsp sea salt, more to taste if desired
- 1/2 tsp freshly ground black pepper
- 4 oz medium or sharp Cheddar cheese, shredded (use 2% if desired)
- Light ranch dressing, recipe follows in notes below
- 2 - 3 green onions, whites discarded, greens chopped
- Cooking spray

- 1 lb. (16 oz.) Queso Blanco VELVEETA®, cut into 1/2-inch cubes
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
- 1 can (14 oz.) artichoke hearts, drained, chopped
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder

- 1 whole Container Cheez Wiz
- Salt And Pepper, to taste
- 1 cup Grated Pepper Jack Cheese
