- 1 cup coarsely chopped onion

- 2 cinnamon sticks
- 2 sprigs thyme
- 2 star anise
- 1/4 tsp. juniper berries (optional)
- 1/8 tsp. ground cumin
- Pinch crushed red pepper
- 1/2 cup canned tomatoes
- 1/4 cup From-Scratch Red Wine Vinegar
- 1 cup red wine
- 3 qts. (96 oz.) chicken stock
Grilled Chicken Penne al Fresco

Spray Deep Covered Baker with olive oil using Kitchen Spritzer
- Ingredients
- 4 garlic cloves, peeled
- 2 cups grape or cherry tomatoes
- 3 cups uncooked mezze penne pasta
- 3 cups chicken broth
- 3/4 cup dry white wine such as Chardonnay
- 1/2 tsp each salt and coarsely ground black pepper
- 1 1/4 cups lightly packed fresh basil leaves, divided
- 1 oz Parmesan cheese, grated (about 1/4 cup packed)
- 2 cups diced grilled chicken breasts
- Additional grated fresh Parmesan cheese and coarsely ground black pepper (optional)

- 1 1 1 c bread crumbs
- 2 2 2 lg egg whites
- 1/2 1/2 1/2 t salt
- 8 8 8 turkey cutlets (1 lb)
- 1 1 1 c cranberry juice
- 2 2 2 T brown sugar
- 2 2 2 T cider vinegar
- 1/2 1/2 1/2 lg orange, zested and juiced
