- 1/2 cup silken tofu (pressed)
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon nutritional yeast
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon turmeric
- 2 tablespoons extra-virgin coconut oil
- 1 portobello mushroom, sliced in 1/4-inch strips
- 1 teaspoon tamari or soy sauce
- sprinkle garlic powder
- sprinkle smoked paprika
- 1 teaspoon liquid sweetener (I used maple)
- 1-2 drops liquid smoke (optional)
- to taste black pepper
- toast of your choice (optional)

Boil first 5 ingredients in heavy medium saucepan until reduced to 1 cup, about 10 minutes
- Sauce
- 2 cups canned low-salt chicken broth
- 3/4 cup whipping cream
- 1/8 t. ground nutmeg

- 1 t. cornstarch dissolved in 2 T. water

- 1/3 c soy sauce
- 2 T maple syrup
- 2 T apple cider vinegar
- 2 T olive oil
- 1 t liquid smoke
- 4 portabellos, sliced
- Base:
- 2 T olive oil
- 4 cloves garlic, minced
- Sauce:
- 1 c cashews, soaked
- 1 c soy milk
- 1/4 c nutritional yeast
- 1 c silken tofu
- Pasta:
- 4 servings spaghetti, cooked, preferably whole wheat

- optional - vegan "bacon" or "prosciutto"

Melt butter in heavy large saucepan over medium heat

- 1 1/2 1 1/2 1/2 cups chopped red bell peppers
- 3/4 3/4 3/4 cup chopped onion
- 1 1/2 1 1/2 1/2 cups basmati rice or other long-grain white rice
- 3 3 3 cups (or more) low-salt chicken broth
- 3/4 3/4 3/4 teaspoon salt
- 1/4 1/4 1/4 teaspoon (generous) crushed saffron threads
- 6 6 6 tablespoons freshly grated Parmesan cheese
- 3 3 3 tablespoons chopped fresh chives
- Parmesan cheese shavings

- 1 can full fat coconut milk (it pays to go with the best quality in this recipe)
- 1 T. lemon juice
- 1 T. liquid smoke
- 1/4 C. water
- 1/2 t. vegemite, marmite or vegan worcestershire sauce
- 2 t. sea salt
- 2 T. nutritional yeast
- 2 T. agar powder or 8 T. of agar agar flakes (the powder is much more concentrated)
- 2 T. potato starch, cornstarch or arrowroot
- 1 T. tapioca starch
- 1 T. dry pectin
- 1 t. xanthan gum

- 2 t plus 1 tablespoon freshly ground black pepper
- 1-1/2 t paprika
- 3/4 t cayenne pepper
- 1/2 t garlic powder
- 1/2 t onion powder
- 3 –4-lb. chicken (not kosher), cut into 10 pieces, backbone and wing tips removed
- 1 c buttermilk
- 1 large egg
- 3 c all-purpose flour
- 1 T cornstarch
