Fresh Tomato Tart with a Basil-Garlic Crust

This tomato tart finally gives tomatoes their time to shine
- Basil-Garlic Tart Dough:
- 1 recipe basil-garlic tart dough, recipe follows
- (8-ounce) slices mozzarella
- 2 large, ripe tomatoes, about 1 pound and cut crosswise into thin slices
- Salt and freshly ground pepper
- 1 tablespoon extra virgin olive oil
- 1/3 cup fresh basil leaves
- 1 medium garlic clove
- 1 1/4 cups unbleached all- purpose flour
- 1/2 teaspoon kosher salt
- 8 tablespoon unsalted butter, chilled and cut into 8 to 10 pieces
- 4 to 5 tablespoons ice water

- 1/4 1/4 1/4 lb pancetta, small cubes
- diced onion
- 2 2 2 diced carrots
- 2 2 2 diced celery ribs
- 2-3 2-3 2-3 cloves minced garlic
- lg. lg. can tomato sauce
- 2 2 2 c lentils
- 6 6 6 c water
- 4 4 4 cups chicken, beef or veg stock

- Boil chopped potatoes with salt. You can peel them or leave the skins on. Mash with a masher or hand held blender for fluffier and lighter potatoes.

- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 cup apple cider
- white wine
- 1 large sweet potato, peeled and cut into 1-inch chunks
- 1/2 head cauliflower, coarsely chopped (about 4 cups)
- 1/2 rotisserie chicken, skin and bones discarded and meat shredded
- Add: kale
