Parippu (Sri Lankan–Style Yellow Lentils)

Preparation1. Bring a large saucepan of water to a boil
- 3 large plum tomatoes, cored
- 2 cups yellow lentils
- 1 can (about 14 oz.) coconut milk
- 1 dried red chile (such as chile de arbol), broken into pieces
- 1 tsp. ground turmeric
- 1 tbsp. coconut oil
- 1 onion, thinly sliced
- 1 cinnamon stick
- 1 stalk lemongrass, smashed, or one 2-inch strip of lemon zest (use a vegetable peeler)
- 1 can (5.4 oz.) unsweetened coconut cream (not coconut milk or cream of coconut)
- 1 cup (packed) baby spinach
- Basmati Rice with Raisins & Cashews
- Mango chutney, for serving
Maple Mustard-Glazed Chicken

Mix glaze. Coat chicken and bake at 350 for 30 min
- 3 T Dijon
- 2 T maple syrup
- 1 T whole grain mustard
- 1 T brown sugar
- 1/4 t thyme
- 4 boneless chicken breasts

Heat 2 tablespoons olive oil in heavy large skillet over medium-high heat
- 5 tablespoons olive oil, divided
- 2 tablespoons plus 1/4 cup chopped shallots
- 4 1/2 cups diced rhubarb, divided
- 1 tablespoon fresh lemon juice
- 2 teaspoons finely grated lemon peel, divided
- 1/4 cup (1/2 stick) butter
- 1/2 cup sliced unpeeled fresh ginger
- 3/4 cup sugar
- 6 tablespoons brandy
- 4 cups low-salt chicken broth
- 1 whole star anise
- 1 bay leaf
- 6 boneless chicken breast halves with skin

- 2 quarts water for boiling potatoes
- 8 potatoes
- 4 canned chicken broth
- 1 small onion, diced
- 1 teaspoon salt
- 1 teaspoon fresh coarse ground black pepper
- 3/4 cup all-purpose flour
- 2 cups cold water
- 1 1/2 cups heavy cream
- 1 cup butter
- 1 1/2 cups colby-monterey jack cheese
- 1/4 cup bacon bits
- 1/4 green onion
Grilled Scallops with Creamed Corn

Preparation Prepare a grill for medium-high heat
- 3 dried pasilla chiles (about 1 ounce total), coarsely chopped
- 2 tablespoons dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon ground coriander
- 1 tablespoon ground fennel
- 2 teaspoons chipotle chile powder
- 2 teaspoons freshly ground black pepper
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Zest of 1 lime
- 1 pound large sea scallops, side muscle removed, rinsed, patted dry
- 2 tablespoons olive oil
- 4 green garlic or 2 medium leeks, white and pale green parts only, thinly sliced
- 1 medium shallot, finely chopped
- 1 garlic clove, thinly sliced
- 4 ears of corn, husked, kernels grated on the large holes of a box grater
- 1 tablespoon unsalted butter
- Kosher salt
- Vegetable oil (for drizzling)
- Lime wedges (for serving)
