Asparagus & Pistachios

In food processor, pulse 1/4 cup nuts and next 4 ingredients until crumbly
- 1/2 cup pistachios
- 6 fresh basil leaves
- 1 tablespoon grated Parmesan
- 1 teaspoon lemon zest
- 1 clove garlic
- 2 tablespoons EVOO
- 20 asparagus spears
Caprese Stuffed Mushrooms

Preheat oven to grill/broil settings on high heat
- Mushrooms:
- Garlic butter
- 2 tablespoons butter
- 2 cloves garlic, crushed
- 1 tablespoon freshly chopped parsley
- 5-6 large Portobello Mushrooms, stem removed, washed and dried with a paper towel
- 5-6 fresh mozzarella cheese balls, sliced thinly
- 1 cup grape (or cherry) tomatoes, sliced thinly
- fresh basil, shredded to garnish
- Balsamic Glaze: (or you can use store bought, or this recipe)
- 1/4 cup balsamic vinegar
- 2 teaspoons brown sugar (OPTIONAL)
Pearl Onion Relish

Preparation In skillet with a lid, cook onions in butter over medium-high heat until golden, about 4 minutes
- 14 oz. frozen pearl onions, thawed in microwave
- 1 1/2 tbsp. butter
- 1/2 cup dried cranberries
- 1/4 cup sugar
- 1/4 cup Chardonnay
- 3 tbsp. cider vinegar
- 1 tsp. fresh thyme leaves
Chocolate-Cinnamon Coffee Cake

8" square baking pan Preheat oven to 350°
- 1/2 c (1 stick) unsalted butter, room temperature, plus more for pan
- 1/2 c blanched hazelnuts, chopped
- 2 oz. bittersweet chocolate, chopped
- 3/4 t ground cinnamon
- 1 c sugar, divided
- 2 c all-purpose flour
- 3/4 t baking powder
- 1/2 t baking soda
- 1/4 t kosher salt
- 1 t vanilla extract
- 2 large eggs
- 1 c plain whole Greek yogurt
Tilapia with Balsamic Butter Sauce, Thyme Mashed Potatoes, and Sugar Snap Peas

Boil potatoes until tender, about 20 minutes
- 3 lb russet or Yukon Gold potatoes, peeled, quartered
- 4-1/2 T butter, room temperature
- 6 T (or more) warm whipping cream
- 1-1/2 T minced fresh thyme
- 1/4 c balsamic vinegar
- 1 garlic clove, minced
- 2 c. sugar snap peas, strings removed
- 2 T olive oil
- 6 , 4-to5-ounce tilapia fillets
- 1/2 c (1 stick) plus 1 tablespoon chilled unsalted butter, cut into 1/2-inch cubes
White Bean Mash

In saucepan cook garlic in the 2 tablespoons hot olive oil for 1 minute
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 15 ounces cans white beans, rinsed and drained
- Chicken broth
- 1/2 teaspoon dried thyme, crushed
- 1 teaspoon lemon juice
- Salt and black pepper
- Olive oil
Chicken Stuffed with Cheese and Spinach

Stuff or roll chicken. Bake at 350 for 30 min
- 4 oz water chestnuts
- 8 oz cream cheese
- 3/4 c sour cream
- 1 pkg Knorr veg soup mix
- 1 pkg frozen spinach
- 8 chicken breasts
- bread crumbs
Blue Cheese Herb Spread

- 2 T parsley
- 2 T chives
- 1/2 c blue cheese
- 8 oz cream cheese
