- 1/4 cup grated Parmesan
- 1 small store-bought rotisserie chicken breast, chopped into 1/4-inch pieces (about 3/4 cup meat)
- 1 cup broccoli florets, cut into 1/4 to 1/2-inch pieces, steamed (about 2 ounces)
- All-purpose flour, for dusting
- Two 10-inch round unfold-and-bake frozen pie crusts, thawed
- 1 large egg
- Special equipment: 12-cup mini-muffin pan; 3-inch round cookie cutter; 2-inch round cookie cutter
Butternut Squash Soup With Chicken Sausage

Heat 1 tablespoon olive oil in a large pot over medium-high heat
- 1/3 cup plus 1 tablespoon extra-virgin olive oil
- 12 ounces cooked chicken-apple sausage, cut into 1/2-inch pieces
- 4 cups cubed peeled butternut squash (1 small to medium squash)
- 3 medium carrots, chopped
- 1 stalk celery, chopped
- 1/2 medium onion, chopped
- 2 1/2 cups low-sodium chicken broth
- Kosher salt and freshly ground pepper
- 1/2 cup fresh sage or parsley leaves

- 1 tbsp. apple cider vinegar
- 1 tbsp. chili garlic sauce
- FOR THE TENDERS
- 1/4 c. cornstarch
- 1 tsp. kosher salt
- 1/2 tsp. cayenne pepper
- 1 c. canned coconut milk
- 1 1/2 c. sweetened shredded coconut
- 1 1/2 c. panko breadcrumbs
- 2 lbs. chicken tenders, white tendons removed and season with salt and pepper
