German Chocolate Bombes

These showstoppers are a creative spin on a classic dessert
- Cooking spray
- 4 oz. unsweetened chocolate, chopped (about 1 cup)
- 1 oz. (1/4 cup) natural cocoa powder
- 1-1/2 cups boiling water
- 7 oz. (1-1/2 cups) unbleached all-purpose flour
- 1 tsp. baking soda
- 1/4 tsp. kosher salt
- 1-1/2 cups packed dark brown sugar
- 8 oz. (1 cup) unsalted butter, softened
- 4 large eggs, at room temperature
- 1/2 cup buttermilk, at room temperature
- 1 tsp. pure vanilla extract
- 3-1/4 oz. (about 1 cup) sweetened, shredded dried coconut, toasted and cooled
- 3 oz. (2/3 cup) pecans, toasted and cooled
- 2/3 cup granulated sugar
- 2-1/2 oz. (5 Tbs.) unsalted butter, cut into chunks
- 6 large egg yolks
- 1 5-oz. can evaporated milk
- 1/2 tsp. pure vanilla extract

Chicken Parmesan Rollatini

Position a rack in the upper third of the oven and preheat to 450 degrees F
- 1 cup fat-free low-sodium chicken broth
- 1 clove garlic, thinly sliced
- 1 14.5-ounce can crushed San Marzano or fire-roasted tomatoes 5 or 6 fresh basil leaves, torn into small pieces
- Kosher salt and freshly ground pepper
- 4 thin (1/8-inch-thick) chicken cutlets (4 ounces each)
- 1/4 cup chopped fresh parsley
- 6 ounces shredded part-skim mozzarella cheese (about 1 cup)
- 1/4 cup grated parmesan cheese

Shrimp Scampi

Combine the shallots, 5 cloves garlic and 2 tablespoons of the olive oil in a mini food processor
- 3 shallots, peeled and chopped (about 1/2 cup)
- 7 cloves garlic, crushed and peeled
- 3/4 cup extra-virgin olive oil
- 2 pounds extra-large or jumbo shrimp, peeled and deveined
- 4 sprigs fresh thyme
- 2 1/2 teaspoons kosher salt
- 2 cups dry white wine
- 2 tablespoons freshly squeezed lemon juice
- 6 tablespoons unsalted butter
- 1/2 cup chopped fresh Italian parsley

Garlic Chicken with Israeli Couscous

For the garlic chicken: Preheat the oven to 350 degrees F
- 2 whole garlic bulbs
- 1 lemon, zested and juiced
- 1 large bunch fresh thyme, leaves only
- 1 tablespoon cumin seeds, toasted and ground
- Pinch crushed red pepper flakes
- Kosher salt
- Extra-virgin olive oil
- One 4-to-5-pound chicken, cut into 8 to 10 parts

- 2 cups medium-size Israeli couscous
- Extra-virgin olive oil
- 3 ribs celery, sliced thin on the bias

Fennel & Rosemary Beef Tenderloin with Creamy Mustard Sauce

Position a rack in the center of the oven and heat the oven to 375°F
- 1 Tbs. extra-virgin olive oil
- 1 Tbs. finely chopped fresh rosemary
- 1-1/2 tsp. ground fennel seed
- 1 tsp. kosher salt; more to taste
- 1/2 tsp. freshly cracked black pepper
- 2-1/2 - to 3-lb. beef tenderloin roast, excess fat trimmed
- 1/2 cup crème fraîche

- 1 box yellow cake mix
- 1 can (15 oz.) pumpkin puree
- 1 can (12 oz.) evaporated milk
- 3 large eggs
- 1 1/2 c. sugar
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 c. chopped pecans
- 1 c. unsalted butter, melted
Blueberries and Cream Cheese Swirl Quick Bread

Preheat oven to 350. Grease a 9x5" loaf pan and lightly dust with flour
- FILLING:
- 1 c. blueberries, washed, patted dry and sprinkled with 1 tbsp. flour
- 1/2 c. raisins
