Apple Sage Sauce for Pork Wellington

Saute vegetables, tomato paste and bay leaves in butter until soft, about 5 minutes
- 1 tbsp. unsalted butter
- 1/2 c. yellow onion, chopped
- 1/4 c. carrot, chopped
- 1/4 c. celery, chopped

- 2 bay leaf
- 1/4 c. apple cider
- 1/4 c. dry white wine

- SYRUP:
- Zest of 2 lemons, peeled in strips with a peeler
- Juice of 2 lemons (1/3-1/2 c. lemon juice)

- 3/4 c. (6 oz.) water
- 3 tbsp. (1 1/2 oz.) Grand Marnier or orange juice
- FILLING:
- 1 lb. mascarpone cheese
- 2 tbsp. orange zest
- 1 c. (8 oz.) whipping cream
- 1/2 c. (2 oz.) confectioner's sugar
- 2 qt. berries: raspberries, blueberries, strawberries or any

- 4 (5 ounces each) salmon fillets
- 2 teaspoons olive oil plus 2 tablespoons
- Salt and freshly ground black pepper
