Beef Tenderloin With Roasted Shallots

Preheat oven to 375 degrees F (190 degrees C)
- 3/4 pound shallots, halved lengthwise and peeled
- 1 1/2 tablespoons olive oil
- salt and pepper to taste
- 3 cups beef broth
- 3/4 cup port wine
- 1 1/2 teaspoons tomato paste
- 2 pounds beef tenderloin roast, trimmed
- 1 teaspoon dried thyme
- 3 slices bacon, diced
- 3 tablespoons butter
- 1 tablespoon all-purpose flour
- 4 sprigs watercress, for garnish
My Tuscan Bean Soup

I wanted to make a Tuscan Bean soup so I looked at a bunch of different recipes and made my own
- 1 1b turkey sausage 1/2 lb of bacon
- 1 large can of diced tomatoes 3 or 4 stalks of kale (rib removed)
- 2 cans cannellini beans (drained) 2 - 4 cups chicken broth (to taste)
- 4 cloves of garlic diced/minced 1 medium onion
- 2 tsp red pepper flakes 4-6 medium red potatoes (diced thin)
- 1/2 cup fat free cream or half and half Salt and Pepper
Cardamom Tea Cookies

Allow butter and egg yolk to stand at room temperature for 30 minutes
- 1 cup butter
- 1 egg yolk
- 2/3 cup granulated sugar
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
Melissa Martin's Banana Muffins

My friend Melissa made these and they are delicious and healthy
- 1 1/4 cup whole wheat flour
- 1/4 cup Amaranth
- 1/4 cup Oat Bran
- 1/4 cup ground cracked wheat
- 3 ripe bananas
- 1/2 cup raw honey
- 1/2 cup safflower oil
- 1 egg
- 1/2 teaspoon baking soda
- Pinch of salt
Chicken and White Bean Stuffed Peppers

I will double this for 6 peppers
- 2 tsp olive oil
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1/2 half red bell pepper
- 1/4 cup parsley (or cilantro)
- 5 bell peppers (red or green)
- 14 oz shredded cooked chicken breast
- 1/2 tsp cumin
- adobo (or salt) to taste
- 15.5 oz can white beans
- 1/2 cup reduced fat shredded cheddar
Watergate Salad

Mix all ingredients together and refrigerate
- 1 pkg pistachio pudding mix (dry)
- 1 cup crushed pineapple with the juice
- 1 cup miniature marshmallows
- 1/2 cup chopped nuts
- 1/2 cup whipped cream
