Quick Quinoa Meatballs

- 1/2 cup washed quinoa
- 1 pound ground pork
- 1/2 cup diced shallot
- 4 garlic cloves, smashed
- 2 large eggs
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/4 teaspoon ground cinnamon
Tuscan Chicken with White Beans and Wilted Greens

Arrange onions, fennel and garlic in bottom of slow cooker
- 2 cups sliced red onions
- 1 cup sliced fennel bulb
- 2 cloves garlic, minced
- 1 (15-ounce) can white (cannellini) beans, rinsed and drained
- 1 cup reduced-sodium chicken broth
- 4 (5-ounce) skinless chicken breast halves (with bone)
- Salt and freshly ground black pepper
- 2 tablespoons chopped fresh rosemary leaves
- 1/2 cup sliced roasted red peppers (from water-packed jar)
- 4 cups chopped Swiss chard leaves
- 1 crusty loaf of bread
- 2 tablespoons olive oil
- 1 clove garlic
Pasta with Roasted Cherry Tomatoes, Garlic and Basil

My sister in law, Ruchita, made this dish for us and it was so yummy that I had to ask for the recipe
- 1 small shallot, sliced thin
- 2 tablespoons olive oil
- 1 pound cherry tomatoes halved (about 2.5 cups)
- 3 garlic cloves sliced thin
- 1.5 teaspoons balasmic vinegar
- 3/4 teaspoon sugar
- salt & pepper
- 1/8 teasponn red pepper flakes
- 1/2 pound penne (about 2.5 cups)
- Grated parmesan cheese, for serving
Sage Sausage, Apple and Craisin Dressing

This is a recipe I use every year for our Thanksgiving and Christmas dinners
- 1 lb jimmy dean sage sausage (in the tube)
- 16 ounces plain stuffing cubes (not crumbs)
- 6 tablespoons butter, divided (plus more for greasing dish and for topping)
- 1 medium onion, chopped
- 2 granny smith apples, cored, peeled and diced small
- 1 stalk celery, diced small (including leafy end)
- 1 teaspoon kosher salt
- 3 cups chicken broth (I use Swanson)
- 1/4 cup flat leaf parsley, chopped
- 1/2 cup craisins
- 1 egg, beaten
Low Calorie Oatmeal Chocolate Chip Cookies

Preheat oven to 375°. Mix sugar, brown sugar, butter, and applesauce
- 1/3 cup applesauce
- 1/2 tsp vanilla extract
- 2 egg whites
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- pinch of salt
- 1 1/2 quaker oats
- 1/2 cup choc. chips
- 3/4 cup brown sugar
- 4 tbsp sugar
- 2 tbsp light butter
- flour (as much as needed)
Herbed Lentils with Spinach and Tomatoes

Place the lentils in a pot with the water and bring to a boil
- 1 cup French lentils
- 2 cups water
- 2 tablespoons olive oil
- 2 tablespoons diced shallots
- 3 cups baby spinach leaves (about 3 ounces)
- 1 cup halved grape tomatoes (about 1/2 pint)
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Roasted Grape, Goat Cheese and Honey Stuffed Sweet Potatoes

Preheat oven to 350 degrees F
- 4 sweet potatoes
- 2 cups red, seedless grapes
- 1 teaspoon grapeseed oil (or another high heat oil)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 ounces goat cheese
- 2 tablespoons honey + additional for drizzling
- pinch of cinnamon and nutmeg
Balsamic-Braised Chicken with Swiss Chard

1. Heat oil in 12-in. skillet (or super sweet slow cooker!) over medium-high heat until shimmering
- 1 TBSP extra-virgin olive oil
- 1 onion, minced
- 5 tsp. minced fresh thyme or 1 1/2 tsp. dried
- 1 TBSP tomato paste
- 3 garlic cloves, minced
- 1 anchovy fillet, rinsed and minced (I used 1 1/2 tsp. anchovy paste)
- 1/4 tsp. red pepper flakes
- 3 TBSP all-purpose flour
- 1/2 c. balsamic vinegar
- 1 (14.5 oz.) can diced tomatoes, drained
- 1/2 c. low-sodium chicken broth
- 1/4 c. dry red wine
- 2 bay leaves
- 12 (6 oz.) bone-in chicken thighs, skin removed, trimmed (I used 8 boneless, skinless chicken breasts)
- 6 oz. Swiss chard, stems removed and leaves sliced 1/2 in. thick
Low Carb Crab Cakes w/ Roasted Red Pepper Sauce

Approx nutrition info per cake: 65 calories, 4g fat,
- Roasted Red Pepper Sauce:
- 1 cup lump crab meat
- 1 egg, beaten
- 2 tsp dijon mustard
- 1 Tbl fresh lemon juice
- 2 tsp Old Bay seasoning
- 2 Tbl parsley, chopped
- 1.5 Tbl coconut flour
- 2 Tbl coconut oil
- Makes 8 servings:
- 1/4 cup roasted red peppers
- 1 Tbl extra virgin olive oil
- 1 tsp fresh lemon juice
- 1/4 cup fresh avocado
- Blend all of the ingredients until smooth. Season with salt and pepper. Serve.
Slow Cooker Enchiladas

Preheat oven to 350 degrees
- 2 half chicken breasts on the bone with skin (remove skin before adding to enchiladas)
- 1 (16 oz.) red enchilada sauce (no sugar added)
- 1 (4 oz.) can green chile peppers
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese, reduced fat
- 1 (8 oz.) container sour cream, fat free
- 6 medium whole wheat tortillas, low sodium if possible (corn tortillas are not recommended as they tend to fall apart)
