- 3 ripe mashed bananas
- 1/3 cup unsweetened applesauce
- 2 cups quick-cooking oats
- 1/4 cup nonfat milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 tablespoon sugar
Quinoa and Purple Potato Salad

Place the potatoes in a medium saucepan with enough cold water to cover the potatoes by 2 inches
- 12 ounces purple Peruvian potatoes, unpeeled, cut into 1/2-inch pieces
- 4 cups low-sodium chicken broth
- 2 cups quinoa
- 3 cloves garlic, peeled and smashed
- 2 cups (8 ounces) frozen peas, thawed
- 1/2 cup pitted medium black olives
- 1/3 cup chopped fresh oregano leaves
- 1/4 cup extra-virgin olive oil
- 1/4 cup agave nectar
- 3 tablespoons fresh lime juice (from about 2 to 3 large limes)
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

Preheat oven to 400 degrees F
- 3 cups coarsely chopped dates
- 1/4 cup granulated sugar
- 1 1/2 cups water
- 1 cup firmly packed brown sugar
- 1 3/4 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups old-fashioned rolled oats
- 3/4 cup (1 1/2 sticks) very cold butter, cut into small cubes
Swanson Cheddar & Garlic Biscuits

- 5 cups baking mix or 5 cups buttermilk biscuit mix
- 1 cup shredded cheddar cheese
- 1 (14 1/2 ounce) can swanson seasoned chicken broth with roasted garlic
Hot Water Pie Crust

This was my Grandmother's pie crust recipe and it's the one that I've always used
- 1 cup Crisco
- 1/2 cup hot water
- 2 cups flour
- 1 tsp salt
- 1 T vinegar
Chex Party Mix

Preheat oven to 250 degrees and melt the butter in the baking pan
- 2 T butter
- 3/4 tsp seasoning salt
- 2 1/4 tsp Worcestershire Sauce
- 4 cups of chex cereal (pick your favorite kinds)
- 1/2 cup mixed nuts or just peanuts
- 1/2 cup pretzels

Preheat oven to 325°. In a large bowl, with a hand held mixer on medium speed beat egg white until stiff
- 1 large egg white
- 1/4 cup sugar
- 1 tsp almond extract
- 1/4 cup wheat germ
- shredded coconut (optional)
Thick, Chewy Oatmeal Raisin Cookies

In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth
- 1/2 cup (1 stick, 4 ounces, or 115 grams) butter, softened
- 2/3 cup (125 grams) light brown sugar, packed
- 1 large egg
- 1/2 teaspoon vanilla extract
- 3/4 cup (95 grams) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon table salt (I often use a half teaspoon, but I like more salt in my baked goods)
- 1 1/2 cups (120 grams) rolled oats
- 3/4 cup (120 grams) raisins
- 1/2 cup walnuts (65 grams), chopped (optional)

Beat eggs. Beat in splenda, oil, applesauce and vanilla until thick and frothy

- 2 C. Splenda
- 1/4 C. vegetable oil
- 3/4 C. apple sauce, unsweetened
- 1 Tbs vanilla
- 2 C. grated zucchini
- 1 C. all purpose flour
- 2 C. whole wheat flour
- 1 Tbs cinnamon
- 2 tsp baking soda
- 1/4 tsp baking powder
- 3/4 C. walnuts, chopped
Creamy Mushroom Risotto with Rosemary Grilled Pork Tenderloin

Tenderloin: Rub tenderloin with oil, salt, pepper, and rosemary
- 1 (1 1/2 to 2-pound) pork tenderloin
- Olive oil
- Salt
- Freshly ground pepper
- 1 or 2 sprigs fresh rosemary leaves, finely chopped, plus a few sprigs for garnish
- 1-ounce dried mushrooms
- 1 cup boiling water
- 3 tablespoons olive oil
- 1 shallot, minced
- 1 cup Arborio rice
- 1 cup chicken stock, heated
- 1/2 cup dry white wine
- Few pinches salt
- 2 tablespoons butter
- 1/2 cup grated pecorino romano
- 2 tablespoons chopped fresh parsley leaves
