Couscous-Stuffed Peppers with Basil Sauce

Put an oven rack in the center of the oven
- 1 cup low-sodium chicken broth
- 2 teaspoons ground cumin
- 3/4 cup couscous
- 1 cup canned garbanzo beans, rinsed and drained
- 1/4 cup dried currants
- 1 packed cup chopped baby spinach leaves
- 1/2 cup (4 ounces) crumbled feta cheese
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- Kosher salt and freshly ground black pepper
- 2 medium red bell peppers
- 1 medium yellow bell pepper
- 1 medium orange bell pepper
- Hot water, as needed
- 1 packed cup fresh basil leaves
- 1/2 cup (about 4 ounces) creme fraiche
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon water
- 1 garlic clove, coarsely chopped
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon sugar
- 1/4 teaspoon salt, plus extra, as needed
- 1/4 teaspoon freshly ground black pepper, plus extra, as needed
Green Goddess Dressing

Put all of the ingredients into a blender and blend until smooth
- 1/2 ripe avocado, peeled
- 3/4 cup lowfat buttermilk
- 3 tablespoons white wine vinegar
- 2 tablespoons coarsely chopped fresh tarragon leaves
- 1 scallion (white and green parts), coarsely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Pumpkin Bread

This is a recipe that I got from my mom and it's the pumpkin bread that I always make
- 1 tsp nutmeg and cinnamon
- 3 cup sugar
- 1 cup oil
- 4 eggs
- 1/2 tsp salt
- 1 cup pumpkin
- 2/3 cup water
- 2 tsp baking soda
- 3 cups flour
- Nuts and raisins are optional

- 4 x6 inch tortillas ( I use a corn and flour blend)
- 4 Eggs (1 per serving....you can add more if you want)
- 2 Cups cooked rinsed beans ( black bean, pinto, cannellini, or heirloom beans)
- 1/2 onion- sliced or diced
- 2 garlic cloves- minced
- 2 tomaotes- diced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp chipotle powder
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- cracked pepper
- 2 T water
- Olive oil
- 1 large Avocado-sliced
- 2 T chopped fresh cilantro
- 1 lime -cut into wedges
- 1/2 C crumbled cojita, queso fresco, feta or goat cheese (optional)

Double Quinoa Cookies with Cranberries & Walnuts

Preheat oven to 350°F (180°C) 1 large baking sheet, lined with parchment paper 1
- 1-1/4 cups quinoa flour
- 1 tbsp cornstarch or arrowroot
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp fine sea salt
- 1 cup natural cane sugar or packed light brown sugar
- 1 large egg
- 1/2 cup unrefined virgin coconut oil, warmed slightly, or unsalted butter, softened
- 1 tsp vanilla extract
- 1-1/2 cups cooked quinoa (see below), cooled
- 3/4 cup dried cranberries
- 1/2 cup chopped toasted walnuts or pecans
Low Calorie Chocolate Chip Cookies

Preheat oven to 350°F. Lightly spoon flour into a dry measuring cup, level with a knife
- 1 cup flour
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/4 cup light butter, softened
- 1/2 cup brown sugar, packed
- 1/2 tsp sugar
- 1/3 cup unsweetened cocoa

I want to make this but add ground turkey sausage so that I can get more protein
- 3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
- 4 to 6 portobello mushrooms
