My Tuscan Bean Soup

I wanted to make a Tuscan Bean soup so I looked at a bunch of different recipes and made my own. My family loved it so much that I made it again and this time I wrote the recipe down.

Ingredients

  • 1 1b turkey sausage 1/2 lb of bacon
  • 1 large can of diced tomatoes 3 or 4 stalks of kale (rib removed)
  • 2 cans cannellini beans (drained) 2 - 4 cups chicken broth (to taste)
  • 4 cloves of garlic diced/minced 1 medium onion
  • 2 tsp red pepper flakes 4-6 medium red potatoes (diced thin)
  • 1/2 cup fat free cream or half and half Salt and Pepper

Preparation

Step 1

Brown sausage and bacon in pan and then add garlic and onion to caramelize.
Pour in chicken stock, tomatoes, kale, potatoes, and cannellini beans.
Add cracked red pepper flakes, salt, and pepper to taste.
Once mixture comes to a boil reduce heat and let simmer. Add water or chicken broth until the soup reached desired consistency. During last 10 minutes bring soup to a boil, add cream and cook until it boils again.
You may serve it with fresh parmesan cheese.
