Melissa Martin's Banana Muffins

Ingredients
- 1 1/4 cup whole wheat flour
- 1/4 cup Amaranth
- 1/4 cup Oat Bran
- 1/4 cup ground cracked wheat
- 3 ripe bananas
- 1/2 cup raw honey
- 1/2 cup safflower oil
- 1 egg
- 1/2 teaspoon baking soda
- Pinch of salt

Preparation
Step 1
Mix ingredients through cracked wheat together in a bowl.
In a separate mixing bowl, combine the bananas, honey, safflower oil, egg, baking soda and salt.
Slowly add the "flour" mixture in and mix well.
Place in a 350 oven. Toothpick insert works well for the time. You want them to be a slight bit underdone. Also, if the mixture seems too dry, you can add another egg or egg white.
Some substitutions for bananas are pumpkin spice or applesauce. Also, walnuts are a nice add-in as well.
