- 2/3 cup canola oil
- 4 cups small chopped red onion
- 3 tablespoons butter
- 2 tablespoons sugar
- 3/4 cup roasted garlic, from jar
- 5 tablespoons grated Parmesan
- 1/4 cup mayonnaise
- 3 tablespoons minced cilantro leaves
- Salt and pepper
- 12 flour tortillas
- 2 tablespoons balsamic vinegar
Cuban-Style Black Beans

Soak the beans with the baking soda in 10 cups of water for about 3 hours
- 1 pound dried black beans 1/4 teaspoon baking soda
