- 1 CUP RICE - NOT MINUTE RICE, UNCLE BEN’S IS BEST
- 1 ONION, CHOPPED

- Pretzel Dough:
- Hot Dogs or Sausages
- 1 1/2 cups warm water
- 1 tbsp sugar
- 2 tsp kosher salt (reduce amount if using table salt)
- 1 package active dry yeast
- 4 1/2 cups all purpose flour
- 2 oz unsalted butter, melted
- Vegetable oil, for pan
- Baking Soda Bath:
- 10 cups water
- 2/3 cups baking soda
- Egg Wash:
- 1 large egg yolk, beaten with 1 Tbsp water
- Topping:
- Coarse kosher salt or Pretzel Salt1 package active dry yeast
- 4 1/2 cups all purpose flour
- 2 oz unsalted butter, melted
- 10 cups water
- 2/3 cups baking soda

Bacon, Corn, Spinach, and Ranch Pasta Salad

In a large pot of salted boiling water, cook pasta according to package directions until al dente
- 1 lb. bowtie pasta
- 5 strips bacon, cooked and crumbled
- 2 ears corn, kernels stripped
- 2 c. baby spinach
- 1/2 c. ranch dressing
- kosher salt
- Black pepper
Breakfast Lasagna

Preheat oven to 350 degrees
- 9 uncooked lasagna noodles
- 1 lb bulk Italian sausage (sweet or hot), cooked and crumbled
- 12 large eggs, beaten
- 1/2 c milk
- 1 1/2 c shredded mozzarella cheese, divided
- 1 1/2 c shredded sharp cheddar cheese, divided
- 1/3 c shredded Parmesan cheese
- 1 Tbsp vegetable oil
- 1 medium onion, chopped
- 1/3 c all-purpose flour
- 3 1/2 c milk
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp hot sauce (optional - to taste)
- 1/4 tsp ground nutmeg
CREAM OF MUSHROOM SOUP

1 Cut the mushrooms into slices
- 8 ounces fresh mushrooms
- 2 tablespoons onions, chopped
- 1 -2 garlic clove, minced
- 2 tablespoons butter
- 2 -3 tablespoons flour (separated)
- 2 cups chicken broth
- 1 cup light cream or 1 cup evaporated milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon nutmeg

For the sauce: In a medium saucepot set over medium heat, add the wine, bell peppers and shallots
- 1/2 cup white wine
- 1/4 cup finely chopped red bell peppers
- 1 shallot, finely chopped

- 2 heaping tablespoons whole-grain Dijon mustard
- Zest of 1 lemon

Preheat the oven to 375 degrees F
- 2 tablespoons extra-virgin olive oil
- 2 large onions, peeled, halved and thinly sliced
- Kosher salt and freshly ground black pepper
- 2 teaspoons balsamic vinegar
- 1 tablespoon fresh oregano leaves, chopped
- 1/2 cup whole-milk ricotta
- 1 sheet frozen puff pastry, thawed, trimmed to fit a 10-inch pan

- CRUST:
- 7 whole graham crackers
- 4 tablespoons unsalted butter, melted
- 2 tablespoons nutella
- 2 tablespoons brown sugar

- 1 pound fresh or frozen strawberries, washed and stemmed

- 1 pound kidney beans, soaked for 24 hours

- 1 teaspoon liquid smoke
