Sun-Dried Tomato and Fennel Stuffing

Preheat the oven to 350 degrees F
- Two 1-pound loaves white or sourdough bread, crusts removed, cut into 1-inch pieces
- 8 tablespoons (1 stick) butter, plus more for the baking dish
- 4 bulbs fennel, trimmed and coarsely chopped, plus chopped fronds for garnish
- 2 cups low-sodium chicken broth
- 1 cup oil-packed sun-dried tomatoes, coarsely chopped
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
SPANIKOPITA MEATBALLS WITH SPICY CUCUMBER AND YOGURT SAUCE

Preheat the oven to 400 degrees F
- SAUCE:
- 1 tablespoon extra-virgin olive oil, plus some for liberal drizzling
- 1 small onion, finely chopped
- 4 cloves garlic, chopped, divided
- 2 boxes frozen chopped spinach, defrosted.
- 3/4 cup crumbled feta cheese
- 1 pound ground beef
- 1 tablespoons grill seasoning (recommended: McCormick Montreal Seasoning)
- 1 1/2 cups Greek style plain yogurt
- 1/3 seedless cucumber, peeled and chopped
- 3 tablespoons fresh dill
- 1/2 lemon, juiced
- 1 1/2 teaspoons, 1/2 a palm full, cumin
- 1 1/2 teaspoons, 1/2 a palm full, coriander
- Salt
Slow-Cooked Jalapeno Corn

Preheat the oven to 250 degrees F
- 24 ears corn
- 2 cups heavy cream
- 2 sticks (16 tablespoons) butter
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 6 cloves garlic, minced
- 4 jalapenos, sliced very thin
Spinach Cheese Bars

Mix together in bowl and spread in a 9x13" pan
- 1 pkg frozen chopped spinach (small box type in grocery freezer) thawed and squeeze out excess water
- 1 c milk
- 1 c flour
- 1 tsp baking powder
- 1 tsp salt
- 1/4 lb butter, softened
- 1 lb monterey jack cheese, cubed
- 2 eggs
Linguini With Garlicky Shrimp and Fresh Tomatoes
