German Chocolate Cake

TO MAKE CAKE: Preheat oven to 325, spray 3 8' round cake pans or 2 9" rounds with cooking spray and dust with cocoa
- 1 box german chocolate cake mix
- 4 ounce bar of germans sweet chocolate
- 4 Tablespoons chocolate instant pudding mix
- 3/4 cup hot water
- 1/2 cup sour cream
- 1/4 cup vegetable oil
- 4 large eggs, separated
- COCONUT PECAN FILLING
- 12 ounce can of evaporated milk
- 1 1/2 cups sugar
- 1 1/2 sticks real butter (not margarine)
- 4 large egg yolks lightly beaten
- 1 1/2 teaspoons vanilla
- 2 cups toasted sweetened flaked coconut
- 1 1/2 cups toasted chopped pecans (save a few 1/2 pieces for garnish)
- CHOCOLATE GANACHE FROSTING
- 16 ounces semi sweet chocolate chopped
- 1 1/2 cups heavy whipping cream
- 2 teaspoons vanilla

- 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain

- 3 tablespoons unsalted butter, melted, plus more for the baking dish
- 6 to 8 ears of corn, kernels removed (about 4 cups) and juices scraped from the cobs and reserved
- 1 1/2 cups heavy cream
- 1/4 cup chopped pickled jalapenos
- 1 tablespoon sauce from canned chipotle in adobo
- 1/2 cup roughly chopped cilantro leaves
- Kosher salt
- 1 cup crushed tortilla chips (about 2 1/4 ounces; crushed to pea-size)
- 1/3 cup all-purpose flour
- 1/2 teaspoon sugar
- 1/2 cup crumbled Cotija cheese (about 2 1/4 ounces)

GREEN CHILE BREAD

1. Place all ingredients through yeast into bread machine in order suggested by manufacturer
- 1 1/4 cup water
- 1 TB olive oil or walnut oil
- 1 1 pound box white bread mix for bread machines
- 1 pkg yeast (included in mix)
- 1/4 cup mayonnaise
- 1/2 cup chopped scallions
- 8 ounces (2 cups) grated Monterey Jack cheese
- 1/2 cup canned green chiles, drained and chopped
- cornmeal for sprinkling
