Broiled Salmon With Tomato Cream Sauce

- 1 1/2 cups frozen lima beans
- 1 1/2 cups frozen peas
- Kosher salt and freshly ground pepper
- 2 tablespoons unsalted butter
- 1 tablespoon chopped fresh parsley
- 4 6-ounce center-cut salmon fillets (preferably wild)
- 1 medium shallot, minced
- 2 tablespoons white wine vinegar
- 2 tablespoons tomato paste
- 1/4 cup heavy cream
- 1 tablespoon chopped fresh tarragon, parsley or dill
South Carolina Mustard BBQ Sauce

1 Heat the butter over medium heat until it's frothy, then add the onion and sauté for 3-4 minutes
- 4 Tbsp. butter
- 1/2 onion, grated
- 1/2 cup yellow mustard (the kind you get at the ballpark)
- 1/2 cup brown sugar
- 1/2 cup cider vinegar
- 1 Tbsp dry mustard (like Coleman’s)
- 1 teaspoon cayenne
- 1 bay leaf
- Salt to taste

- 4 cups cubed seedless watermelon
- 10 ice cubes
- 1/3 cup fresh lime juice
- 1/4 cup white sugar
- 1/8 teaspoon salt
Mini Pepper Nachos with Corn, Black Beans and Avocado

Mix the corn, black beans, pico de gallo and avocado and season with salt and pepper
- 2/3 cup corn (grilled, charred, fresh, thawed or canned)
- 2/3 cup black beans (rinsed and drained canned or cooked from 1/3 cup dry beans)
- 2/3 cup pico de gallo or your favourite salsa
- 1 medium avocado, diced
- salt and pepper to taste
- 1 pound mini peppers, halved and seeded
- 1 cup cheddar cheese, shredded
- 1/4 cup green onions or cilantro (optional)
