Rhubarb Simple Syrup

- 1 ⁄2 cup finely chopped carrot (very small)
- 1 ⁄2 cup frozen peas, thawed
- 4 cups cold cooked rice, grains separated (preferably medium grain)
- 4 green onions, chopped
- 2 cups bean sprouts
- 2 tablespoons light soy sauce (add more if you like)

Great appetizer. Serve with Tzatziki or marinara sauce for dipping
- 2 cups zucchini, grated and squeezed
- 1/4 cup of feta, crumbled
- 1 splash ouzo (optional)
- 1 clove garlic, chopped
- 2 green onions, sliced
- 1 handful herbs (such as mint, dill and parsley), chopped
- 1 egg, lightly beaten
- salt and pepper to taste
- ~1/2 cup flour (I used whole wheat)

Fire Roasted Poblano Rotini with Sweet Sausage

Cook pasta according to package directions
- DRESSING:
- 1 box Dreamfields Rotini
- 1 bottle (12 ounces) favorite beer
- 1 package (about 1 pound 3 ounces) sweet Italian sausage
- 3 large garlic cloves, chopped
- 3 medium-heat chili peppers, seeded
- 2 poblano peppers, fire-roasted and seeded*
- 1 medium red onion
- 1/4 to 1/2 cup fresh cilantro leaves
- Fresh lemon juice
- Cilantro leaves
- 1/4 cup extra virgin olive oil
- 1/8 cup fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
Onion Cheese Yeast Bread

Add the yeast and ginger to the water with a teaspoon of the sugar
- 1 envelope yeast
- 1/4 cups lukewarm water
- pinch of ginger (helps activate the yeast)
- 2 cups warm buttermilk
- 1/3 cup sugar
- 1/4 cup melted butter, lukewarm not hot
- 1 tsp salt
- 3/4 tsp baking soda
- 1 1/2 cups shredded extra sharp cheese
- 2 cups chopped onions, caramelized
- 6 cup bread flour, more or less as needed

Preheat oven to 350°F. Butter a 13x9x2-inch baking dish or spray with nonstick spray
- Phyllo Pastry Topping:
- 6 sheets phyllo pastry (about 17x13-inches each), defrosted if frozen 4 tablespoons unsalted butter, melted
- Filling:
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- Two 10-ounce packages frozen, chopped spinach, defrosted
- 2 cups ricotta cheese
- 8 ounces feta cheese, crumbled
- 8 ounces jack cheese, grated
- 2 large eggs
- 3 tablespoons finely chopped fresh dill
- 3 tablespoons finely chopped fresh parsley

You really, really, really need to shred your own cheese when making Pimento Cheese
- 10 slices bacon
- 1 pound cheddar cheese (medium or sharp)
- 1 4-ounce jar pimentos, drained well
- 1 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon granulated garlic

- 2 Tablespoons corn oil
- 1 large onion - chopped
- salt-to taste
- a pinch of pepper
- 1 teaspoon chili powder
- 1 1/2 teaspoons hot pepper sauce- I use Frank's brand
- a pinch of cayenne pepper
- 1 teaspoon sugar
- 1 teaspoon prepared yellow mustard
- 2 Tablespoons tomato paste
