Pina Colada Cake

Make cake according to directions on box and bake 9 X 13 in
- 1 yellow cake mix
- 1 can Cream of Coconut (in drink mixer section of store)
- Cool Whip
MARINATED LAMB CHOPS WITH MANGO CHUTNEY AND BASMATI-PISTACHIO PILAF

In a large bowl whisk the marinade ingredients
- Marinade
- 1 cup plain Greek yogurt, whole milk or 2%
- 1/4 cup chopped fresh mint leaves and tender stems
- 1/4 cup chopped fresh cilantro leaves and tender stems
- 2 tablespoons vegetable oil
- 2 tablespoons fresh lime juice
- 1 tablespoon peeled, minced fresh ginger
- 3 garlic cloves, minced
- 1 teaspoon garam masala
- 1 teaspoon curry powder, preferably Madras (hot)
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 8 large rib or loin lamb chops, each about 1 inch thick
- Chutney
- 1/4 cup apricot preserves, stirred
- 1-1/2 tablespoons chopped fresh mint leaves
- 1-1/2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon fresh lime juice
- 1/2 teaspoon white wine vinegar
- 2 teaspoons peeled, minced fresh ginger
- 2 –3 teaspoons seeded and minced jalapeño chile pepper (1/2 medium)
- 1 large mango, cut into small dice (about 2 cups)
- 1/8 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- Pilaf
- 1-1/4 cups basmati rice
- 2 tablespoons vegetable oil
- 1-2/3 cups chopped yellow onion (1 medium)
- 3 garlic cloves, minced
- 3/4 teaspoon garam masala
- 2 cups low-sodium chicken broth
- 3/4 teaspoon kosher salt
- 2/3 cup golden raisins
- 1/2 cup shelled, unsalted pistachios, roughly chopped
- Olive oil cooking spray
- 1/4 cup chopped fresh mint leaves (optional)
MONSTER COOKIES

Preheat the oven to 350 degrees F
- 3 eggs
- 1-1/4 cups packed light brown sugar
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 12-ounce jar creamy peanut butter
- 1 stick butter, softened
- 1/2 teaspoon corn syrup
- 1/2 cup multi-colored chocolate candies
- 1/2 cup chocolate chips
- 1/4 cup raisins, optional
- 2 teaspoons baking soda
- 4-1/2 cups oatmeal (not instant)
PUMPKIN CREAM CHEESE BARS

- 1-1/3 cups all-purpose flour
- 3/4 cup sugar, divided
- 1/2 cup packed brown sugar
- 3/4 cup cold butter, cubed
- 1 cup old-fashioned oats
- 1/2 cup chopped pecans
- 1 package (8 ounces) cream cheese, softened, cubed
- 2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground cardamom
- 1 can (15 ounces) solid-pack pumpkin
- 1 teaspoon vanilla extract
- 3 Eggs, lightly beaten
SUGAR COOKIES

- 2 sticks oleo or 1 cup butter
- 2 cups sugar
- 2 eggs
- 1 cup salad oil
- 1/4 teaspoon salt
- 5 cups flour
- 2 teaspoons cream of tartar
- 2 teaspoons baking soda
- 2 teaspoons vanilla
CROCK POT PIZZA

Brown beef, mushrooms and onion, then drain
- 1-1/2 pounds hamburger
- 1 onion diced
- 1- 14oz can of pizza sauce
- 1- 16oz can of spaghetti sauce
- 1- 16oz package of wide egg noodles
- 4 oz cheddar cheese
- 4 oz mozzarella cheese
- 1 package pepperoni slices
- 1 package of sliced fresh mushrooms
ICED OATMEAL APPLESAUCE COOKIES

Preheat oven to 350 degrees
- COOKIE DOUGH:
- 4 Tablespoons unsalted butter, melted
- 1 cup packed light-brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/2 cup chunky-style applesauce
- 1 1/2 cups old-fashioned rolled oats
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon coarse salt
- 1 cup golden raisins
- ICING:
- 1 3/4 cups confectioners' sugar
- 3 Tablespoons pure maple syrup
- 3 Tablespoons water
COCONUT CHEWS

Preheat oven to 350 degrees Blend together crust ingredients: shortening, powdered sugar and flour
- Crust:
- 3/4 cup shortening (1/2 cup butter or oleo)
- 3/4 cup powdered sugar
- 1 1/2 cup flour
- Topping:
- 2 eggs
- 1 cup brown sugar
- 2 Tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1/2 cup chopped nuts
- 1/2 coconut
- Glaze:
- 1 1/2 cup powdered sugar
- 2 Tablespoons margarine
- 3 Tablespoons orange juice
- 1 teaspoon lemon juice
LEMON WHIPPERSNAPS

- 1 package (17 1/4 oz.) Pillsbury lemon cake mix
- 2 cups (4 1/2 oz. carton) frozen whipped topping, thawed
- 1 egg
- 1/2 cup powdered sugar, sifted
ITALIAN BREAKFAST COBBLER

- 1 LB Italian sausage
- 1 red pepper, chopped
- 1 large onion, chopped
- 1 - 8 ounce package fresh mushrooms, sliced
- 2 - 10 ounce packages of frozen spinach, thawed and drained
- 2 cups mozzarella cheese
- 1 tablespoon oil
- Topping
- 1 1/2 cups self rising flour
- 1/2 cup butter, melted
- 1 1/4 cups milk
- 1/2 cup grated parmesan cheese
- 5 eggs
