- 1 1/2 c. dry lima beans
- 3 c. water
- 2 to 2 1/2 lbs. ham hocks

- 1 large onion, chopped
- 1 green pepper, sliced

- 1/2 tsp. dried thyme leaves
- black pepper to taste

Pork & Corn Casserole

1. Cook noodles according to package directions
- 2 cups uncooked egg noodles
- 2 pounds boneless pork, cut into
- 3/4-inch cubes
- 2 medium onions, chopped
- 2 cans (15 1/4 ounces each)
- whole kernel corn, drained
- 2 cans (10 3/4 ounces each)
- condensed cream of mushroom
- soup, undiluted
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

1. In a large bowl, cream the butter, shortening and sugars until light and fluffy
- 1/2 cup butter, softened
- 1/2 cup shortening
- 3/4 cup sugar

- 1/4 c. water

- 3/4 cup chili sauce

- 1/4 steak sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon garlic, finely pressed
- 1/4 cup fresh horseradish, finely grated
- 3 tablespoons dry mustard
- 1 tablespoon Tabasco sauce
- 1 tablespoon molasses
- 1 tablespoon red wine vinegar
- 1/2 cup dry red wine
- 1 tablespoon black peppercorn
- 3 tablespoons tequila

Sprinkle beef cubes with salt and pepper, coat lightly with flour, shaking off excess

- 3 medium russet potatoes, peeled and thinly sliced
- 2 medium sweet potatoes, peeled and thinly sliced
- 11/2 to 2 cups crushed butter-flavored crackers
- 3 tablespoons grated Parmesan cheese
