- 2 pounds beef stew meat, cut into 1 inch cubes
- 2 tablespoons cooking oil
- 3 cups water or low sodium beef broth
- 1 large onion, chopped
- 2 teaspoons pepper
- 1 to 2 teaspoons salt, optional
- 1 1/2 teaspoons garlic powder
- 1 teaspoon rosemary, crushed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon ground marjoram
- 2 bay leaves
- 1 can (6 oz) tomato paste
- 2 cups cubed peeled potatoes
- 2 cups sliced carrots
- 1 large green pepper, chopped
- 1 package (10 oz) frozen green beans
- 1 package (10 oz) frozen peas
- 1 package (10 oz) frozen kernel corn
- 1/4 pound mushrooms, sliced
- 3 medium tomatoes, chopped
Pork Medallions with Cider Sauce

- 1 tablespoon oil
- 1 1/2 lb. pork tenderloin, trimmed, cut into eight 2" thick medallions, seasoned with salt
- 1 cup apple cider
- 1/2 cup dry white wine
- 1 tablespoon apple cider vinegar

Freezer Almond Butter Cups

In a small bowl or cup mix the seed butter with a T of coconut oil
- 4 T Almond Butter I love to use a crunchy, raw one (watch out for any w/added sugars or oils though)
- 3 T Organic Extra Virgin Coconut Oil
- 1 T Hershey's Unsweetened Cocoa Powder (the dark one tastes best)
- Optional - 5 drops liquid vanilla stevia (I've been finding that I don't need any sweetener)

- 2 eggs
- 1 teas vanilla extract
- 2 cups applesauce, unsweetened
- 1 banana, mashed
- 6 packets of Sweetleaf Stevia or 1 1/2 teas stevia powder or use 1/2 cup honey
- 5 cups, Old Fashioned rolled oats
- 1/4 cup flaxseed meal
- 1 Tbls ground cinnamon
- 3 teas baking powder
- 1 teas salt
- 2 3/4 cups milk
- Optional toppings: raisins, walnuts, chocolate chips
