Deep-Dish Skillet Pizza

1. To make Dough: Dissolve brown sugar in ½ cup warm water in large bowl
- 1 tsp. light brown sugar
- 1/2 pkg. dry yeast (1/4 oz.)
- 3/4 cup whole-wheat pastry flour
- 1/2 cup all-purpose flour
- 1 Tbs. flax meal or ground flaxseed
- 2 tsp. olive oil
- 3/4 tsp. salt
- 2 Tbs. olive oil
- 3 cloves garlic, minced (1 Tbs.)
- 8 cups loosely packed kale
- 1 cup sliced mushrooms
- 1 tsp. ground fennel seed
- 2 Tbs. Neufchâtel cheese (2 oz.)
- 1 cup crumbled feta cheese (4 oz.)
- 12 cherry tomatoes, halved
- 2 Tbs. chopped fresh oregano or basil
Macha Green Tea Salmon

- 1 lb (500 gm) boneless skinless salmon fillet (wild caught if possible)
- 1/2 sleeve (about 15) butter type crackers
- 1 tsp herbs de provence
- 1 tsp green tea
- 1 small bunch italian parsley (1-2 teaspoons chopped)
- 1 tsp honey (heated)
- 1 tsp Olive Oil

Preheat large sauté pan with medium heat
- 1 package vegan gnocchi
- 1 bag frozen baby Brussel sprouts or fresh
- 12 oz. cremini or white mushrooms
- 1 bunch asparagus (or other veggie of your choice, fresh or frozen)
- 1 tsp. dried thyme
- 2 cloves garlic, minced (I always use double garlic)
- 1 tsp. paprika
- 1 tsp. cumin
- 2 Tbs. canola oil
- Salt and pepper to taste
- Parsley for garnish (optional)

- Basic tuna salad recipe
- You might call this tuna-mayo.
- 1 small (125g / 3 1/2 oz) can water packed tuna, very well drained (I cut the lid off completely, and use it to really squueze out the water.)
- 3-4 tablespoons of mayonnaise, or as much as you want
- Grind of black pepper
- Pinch salt (optional)
- Mash it all together to a smooth paste with a fork.

- Tuna salad with miso
- My sister Meg used to work at the Toraya tea room in New York, and made a fantastic tuna salad plate with miso dressing. This is a tuna salad spread that takes those flavors.
- 1 small (125g / 3 1/2 oz) can water packed tuna, very well drained
- 2 tsp. white miso
- 2 Tbs. mayonnaise
- Squeeze of lemon
- Grind of black pepper
- Mash it all together to a smooth paste with a fork.
- Tuna salad with anchovies and capers
- This one is a bit salty, but delicious!
- 1 small (125g / 3 1/2 oz) can oil packed tuna, very well drained
- 3-4 oil cured black olives, pitted
- 3 anchovy filets
- 1 Tbs. capers
- 2 Tbs. mayonnaise
- Chop up the olives and anchovies very finely. Blend with the tuna and mayonnaise. Add the capers to the mix or sprinkle them onto the sandwich just before eating. (This is also great mixed pasta.)
Mama Canales Garcias Avacado Shrimp Salsa

Makes about 6 cups salsa Bring salted water* to a boil and turn off heat
- Makes about 6 cups salsa
- 1 pound small shrimp, shelled and deveined or pre-cooked and defrosted
- 2 firm-ripe avocados, halved, scored into a small dice
- 2 cups grape tomatoes, quartered or 2 cups chopped tomatoes, drained a little
- 1/2 small white onion, very finely chopped (use red if you can’t find white)
- 1 small jalapeño, seeded and finely chopped (optional)
- Drizzle of olive oil
- Juice of 1 to 2 limes
- Salt
- Handful cilantro leaves, roughly chopped
- Hot sauce, on the side
- Tortilla chips, to serve

- Fake Bibimbap meat:
- 1/2 cup mashed white beans, any kind.
- 1 cup vegetable broth
- 1.5 cups gluten
- 1/4 cup Bulgogi sauce/marinade, or make your own from recipe on Internet.
- Jar of Bulgogi sauce or search Key Ingredient for Bulgogi marinade meatless.
Vegetarian Tacos with Spinach, Corn and Goat Cheese

Directions Heat the oil in a large nonstick skillet over medium-high heat
- 1 tablespoon olive oil
- 1 14 ounce package extra-firm tofu, drained, patted dry, and crumbled
- 1 1/2 teaspoons chili powder kosher salt and black pepper
- 1 10-ounce package frozen corn (2 cups), thawed
- 1 5 ounce package baby spinach (about 6 loosely packed cups)
- 8 small flour tortillas, warmed
- 3/4 cup crumbled fresh goat cheese (3 ounces)
- 3/4 cup store-bought refrigerated salsa
