Texas Roadhouse Rolls - Copycat Recipe

- 4 tsp. active dry yeast
- 1/2 c. warm water
- 2 c. milk, scalded and cooled to lukewarm
- 3 Tbl. of melted butter, slightly cooled
- 1/2 c. sugar
- 2 quarts all purpose flour (7-8 cups)
- 2 whole eggs
- 2 tsp. salt
Meatloaf with Mustard and Sour Cream Gravy

Preheat the oven to 375 degrees F
- 3 strips bacon
- 2 eggs
- 1/4 cup ketchup
- 2 tablespoons sour cream
- 3/4 cup plain breadcrumbs
- 2 tablespoons minced yellow onion
- 2 cloves garlic, minced
- Kosher and freshly ground black pepper
- 2 Italian sausages, casings removed (mild or spicy)
- 1 pound 80/20 ground beef
- Mustard and Sour Cream Gravy, recipe follows
- Special equipment: glass loaf pan
- 2 tablespoons butter
- 1/2 onion, minced
- 1 tablespoon all-purpose flour
- 1 cup beef stock
- 3 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- Kosher salt and freshly ground black pepper
Vegan Swedish Beyond Meatballs

Vegan Swedish meatballs in a creamy, deliciously rich sauce
- MEATBALLS:
- 1 medium yellow onion, finely minced
- 2 tablespoons Earth Balance
- 2/3 cups cashew cream or plain soy creamer
- 3 slices of bread, crusts cut off, and cubed
- 1 package Beyond Meat Crumbles, thawed
- 1 package Gimme Lean Sausage Style.
- 2 teaspoons sea salt
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cardamom
- 1 teaspoon black pepper
- SAUCE:
- 6 tablespoons Earth Balance
- 1/3 cup unbleached flour
- 1 quart veggie chicken stock or plain veggie stock with a tablespoon of poultry seasoning added
- 12 ounces vegan sour cream, or to taste
- Sea salt, to taste
- 1 cup crimini mushrooms, sliced thin
- 1/4 cup dry sherry (optional)
Vegetable Pot Pie

Directions: Preheat oven to 400°F
- 1 recipe for vegan pie crust, sugar omitted.. or regular pie crust... or mashed potatoes.. or.....
- 1/4 cup vegan butter
- 1 tablespoon palm oil
- 1 cup leeks, chopped
- 1 teaspoon garlic, minced
- 2 cups asparagus, chopped into 1/2-inch pieces
- 1 cup carrots, small dice
- 1 cup frozen peas
- 1/3 cup flour
- 1 teaspoon sage, finely chopped
- 1 tablespoon habanero sauce
- 1 3/4 cups vegetable broth
- 1/2 cup unsweetened soy milk
- 1 1/2 cups seitan (or your favorite faux meat), cut into small chunks
Soy Chorizo Onion and Mushroom Enchiladas with Fresh Tomatillo and Avocado Salsa

In a skillet, heat oil over medium-high heat
- 7-8 organic corn tortillas
- 3/4 cup or 1/2 link soy chorizo, casing removed (I got mine from Trader Joe's)
- 10-12 oz mushrooms (I used portabellos)
- 1 medium-large onion sliced
- 2 cups fresh tomatillo salsa (you can substitute store bought for a shortcut, otherwise see recipe below)
- 1 cup roasted tomato salsa (I like Frontera brand but Trader Joe's double roasted salsa is also delicious)
- 1/2 cup cilantro roughly chopped
- 1-2 cups shredded organic Mexican cheese blend
- 1/3 cup cotija cheese grated (optional)
- 2 tbs canola or mild olive oil
- 1/3 cup of Mexican crema or sour cream

For the Crust: Place graham crackers in the bowl of a food processor and pulse until crumbs are formed
- Crust:
- 14 whole-grain graham cracker squares (7 full sheets)
- 2 tablespoons melted unsalted butter
- 1 tablespoon dark brown sugar
- 1 ⁄4 teaspoon salt
- Nonstick cooking spray
- Filling:
- 1 (8-ounce) package 1/3 less-fat cream cheese softened at room temperature
- 1 (14-ounce) can fat-free sweetened condensed milk
- 1 ⁄4 cup pasteurized egg product (such as egg beaters)
- 1 teaspoon finely grated lemon zest
- 1 ⁄2 cup fresh lemon juice
- 2 teaspoons powdered gelatin
- 3 tablespoons boiling water
Yasa Tibs (Ethiopian Sauteed Fish)

Marinate fish in berbere spice and lime juice for 1 hour
- 500 g blue eye cod fillets, boned & cut into chunks
- Juice of 4 limes
- 1 1/2 teaspoons berbere spice
- 3 cm piece ginger, peeled & grated
- 3 garlic cloves, crushed
- 2 tablespoons of sesame oil
- 2 tablespoons of olive oil
- 1 teaspoon smoky paprika
- 1/4 cup passata (tomato sauce)
- 1/4 cup fish stock
- 1 tablespoon chopped coriander, leaves & stalks
Patty Melt

Melt butter over flat top griddle or large cast-iron skillet and toast rye bread slices
- 2 tablespoons butter, softened
- 4 slices rye bread
- Salt and freshly ground pepper, to taste
- 1 1/2 pound fresh ground round (divided and shaped into 2 oval burgers)
- 1 tablespoon olive oil
- 1 small red onion, peeled and sliced into rings
- 2 to 3 slices Swiss cheese

This uses FIELD ROAST MEATLOAF, but could use any fake meat, which my wife prefers I call "Cruelty Free Meat"
- Four slices of Field Roast meatloaf cut into small pieces.
- 3 or 4 baby potatoes sliced into bite sized pieces, mixed colors if you can.
- One or two inches of zucchini shredded
- Half a cup of sliced onions, bite sized
- two or three cloves of garlic sliced thinly
- a few leaves of baby spinach
- 2 tablespoons of stone ground mustard
- seasoning. I used a house blend spice from my local deli.
- Pocket bread, toast, english muffins, bagels, whatever.
