Quinoa and Black Beans

Heat the oil in a medium saucepan over medium heat
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, peeled and chopped
- 3/4 cup uncooked quinoa
- 1 1/2 cups vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 1 cup frozen corn kernels
- 2 (15 ounce) cans black beans, rinsed and drained
- 1/2 cup chopped fresh cilantro
Easy Potato Skins

1 Heat the oven to 400°F and arrange a rack in the middle
- 8 (3-inch-long) russet potatoes (about 2 1/4 pounds), scrubbed and thoroughly dried
- 2 tablespoons unsalted butter (1/4 stick), melted
- Kosher salt
- Freshly ground black pepper
- 2 cups shredded sharp cheddar cheese (about 4 ounces)
- 5 to 6 slices cooked, crumbled bacon
- 1/3 cup sour cream
- 2 tablespoons finely chopped fresh chives

- 1 bunch asparagus, ends trimmed and cut into 1 1/2-inch pieces

Tear bread into 1-inch cubes and place into a large bowl
- 2 (1 pound) loaves multigrain bread
- 2 tablespoons margarine
- 2 carrots, minced
- 2 large stalks celery, minced
- 1 onion, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon crumbled dried sage
- ground black pepper to taste
- 5 1/2 teaspoons egg replacer (dry)
- 1/2 cup water
- 1/2 cup vegetable broth
- 2 (16 ounce) packages chicken-style seitan, cut horizontally into 1 inch thick strips
- 1 cup garbanzo bean gravy
- 1 (17.5 ounce) package frozen puff pastry, thawed

Instructions Drain the beans and rinse them well
- 2 cans (15.5oz each) garbanzo beans, rinsed and drained
- 2 tablespoon coconut oil, melted, divided
- 1/2 teaspoon salt
- 1 teaspoon minced garlic or more if you like
- 1/2 cup grated Parmesan cheese
- Optional: cayenne powder or curry powder

- Per sandwich:
- 4 oz firm tofu
- 3/4 tbsp soy sauce
- 1/2 - 1 tsp minced fresh ginger
- 1/4 cup rice vinegar
- 1/2 tsp kosher salt
- 2 tsp sugar
- 1/2 tsp red pepper flakes
- 1/4 cup grated or julienned carrot
- 1/4 cup grated daikon radish
- 1/2 tbsp vegetable oil
- Vietnamese sub or French baguette
- 1 tbsp vegenaise or low-fat mayonnaise
- 1 tsp chili sauce (sriracha), or to taste
- ~ 6 sprigs of fresh cilantro (including stems)
- 2 thin slices of cucumber, about 6 inches long
Mexican Chopped Salad with Honey-Lime Dressing

Toss all salad ingredients in a large bowl
- 2 1/2 cups chopped romaine lettuce
- 1 can (15.5 oz) black beans, rinsed and well drained
- 3/4 cup chopped seeded tomato
- 3/4 cup chopped peeled jicama
- 3/4 cup fresh corn kernels, uncooked (or frozen or canned)
- 3/4 cup thinly sliced radishes
- Half a ripe avocado, diced
- 1 red bell pepper, chopped
- 1/4 cup crumbled reduced-fat feta cheese
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 2 tbsp honey
- 2 tbsp finely chopped fresh cilantro
- 1 garlic clove, peeled and minced
- 1 tsp chopped jalapeño pepper (use canned for less heat)

- 1/2 teaspoon kosher salt
- 1 tablespoon sugar
- 12 tablespoons (11/2 sticks) cold unsalted butter, diced
- 1/2 cup ice water
- 4 Granny Smith apples
- 1/2 cup sugar
- 4 tablespoons (1/2 stick) cold unsalted butter, small diced
- 1/2 cup apricot jelly or warm sieved apricot jam

- 2 scallions, thinly sliced
- 2 cloves of garlic, grated (same way as the apple)
- 4 Tablespoons sesame seeds, toasted
- 4 Tablespoons dark sesame oil
