Perfect Lemon & Coconut Bars

Makes around 40 pieces This is a quite big batch, you could easily half the recipe
- Crust
- 5 tbsp (75 g) coconut oil
- 3 tbsp maple syrup
- 2 cups/480 ml (200 g) shredded coconut (unsweetened)
- 1 cup/240 ml (100 g) almond flour
- 1 pinch sea salt
- 2 egg whites (save the yolks for the lemon curd)
- Filling
- 3 eggs + 2 egg yolks
- 6 tbsp maple syrup
- 1/3 cup / 80 ml lemon juice + 1 tbsp zest (around 2 lemons)
- 1/3 cup / 80 ml (35 g) almond flour
- Dust with 3 tbsp coconut flour (or powdered sugar)

Cruelty Free Diet: Why the name "Cruelty Free"? I am a vegetarian, and like meat
- 1-14 oz. package extra-firm tofu, pressed for 30 minutes (you can use a tofu press)
- 1 tbsp. vegetable or peanut oil
- 6 tbsp. creamy peanut butter
- 2 tbsp. rice vinegar
- 1 tbsp. soy sauce
- 2-3 tsp. light brown sugar (to taste)
- 1 tbsp. ginger juice (see note)
- cayenne to taste (optional)
- 1 tbsp. lite coconut milk or water
- 1 small carrot, peeled and shredded
- 1 small sweet red pepper, sliced
- 1/4 c. sliced green onion
- 2 tbsp. chopped cilantro
- 4 breads of choice. English muffin... sandwich wraps, pitas, tortillas, or naan (if you don't eat dairy, make sure the naan is vegan if you use it!)

Directions For the Dough: Put the sugar and warm water in a bowl and mix until the sugar has dissolved
- 1/4 cup sugar
- 1/2 cup warm water
- 2 1/2 teaspoons active dried yeast
- 2 cups flour
- 1 egg, slightly beaten (plus another for egg wash, if desired)
- 3 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1/2 tablespoon vegetable oil
- 1/4 cup finely diced onion or shallot
- 5 1/2 cups finely chopped mixed mushrooms (I used white button and shitake)
- 1 tablespoon dark soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon hoisin
- 1 teaspoon sesame oil
- 1/4 cup vegetable stock
- 1 teaspoon cornflour

Preheat the broiler. Bring a large pot of salted water to a boil
- Kosher salt
- 8 ounces orzo pasta (about 2 cups)or large couscous
- 1/2 pound large shrimp, peeled and deveined (tails removed), coarsely chopped
- 1/3 cup plus 1 tablespoon extra-virgin olive oil
- 1 clove garlic, minced
- Freshly ground pepper
- Grated zest of 2 lemons, plus 1/4 cup fresh lemon juice
- 4 scallions, thinly sliced
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh dill
- 1 cup diced English cucumber
- 4 ounces crumbled feta cheese
- 3 tablespoons halved kalamata olives

Directions For the sauerkraut: Heat the olive oil in a medium saucepan over medium heat
- Sauerkraut:
- 1 tablespoon extra-virgin olive oil
- 1 small onion, thinly sliced
- 1 clove garlic, thinly sliced
- 1 pound bag sauerkraut, drained and rinsed
- 1 sweet apple, peeled, and grated
- Generous pinch allspice
- Salt and freshly ground black pepper
- Russian Dressing:
- 1/4 cup mayonnaise
- 1 tablespoon chili sauce or ketchup
- Dash hot sauce
- 1 tablespoon minced fresh chives and/or fresh dill
- 2 teaspoons capers, chopped
- 1 teaspoon freshly squeezed lemon juice
- Sandwiches:

- 12 slices tempeh bacon, optional
- 1 to 2 tablespoons unsalted butter, room temperature
- 8 slices rye bread
- 12 slices dill pickle
- 2 cups grated Swiss cheese (8 ounces)
