- 1/2 cup Goat Cheese
- 1/2 cup Roasted Salted Pistachios, chopped
- 1/8 cup Shaved or Thinly Sliced Red Onion
- 1/4 cup Balsamic Vinegar
Chocolate Cream Cheese Truffles

1. Pour the cocoa powder into a shallow pie pan and set aside
- 3.5 cups powdered sugar
- 8 ounces softened cream cheese
- 4 ounces unsweetened chocolate
- 1/2 cup cocoa powder, for rolling
Chicks-on-the-Ranch Deviled Eggs

1. Cut a thin slice from the bottom of each egg so it sits flat
- 6 hard-cooked eggs
- 1/4 cup shredded Parmesan cheese
- 1/4 cup prepared ranch salad dressing
- 1 teaspoon Dijon mustard
- Dash pepper
- 5 carrot chips
- 12 capers
- Fresh dill sprigs
Prune Bars

Add enough water to 3 oz. of lemonade to make 1 cup
- 1/2 of a 6 oz. can Frozen Lemonade Concentrate (thawed)
- 1 Cup (6 oz.) Pitted Prunes
- 1 Cup Brown Sugar divided in half
- 2 Tablespoons Flour
- 1/8 tsp. Salt
- 1/3 Cup Walnuts (chopped)
- 1 Cup Flour
- 1 Cup Oatmeal
- 1/2 tsp. Cinnamon
- 1/2 Cup Margarine
Speedy Mincemeat Squares

Drain the fruit cocktail, reserving 1/2 cup of syrup
- 1 (17 oz.) Can or 2 Cups Fruit Cocktail (drained)
- 1 (9 oz) pkg. Condensed Mincemeat
- 1 Cup Sugar
- 2 1/2 Cups Biscuit Mix
- 1 Egg
- 3 Tablespoons Margarine (melted)
- Vanilla Ice Cream
Collins Punch

Mix sugar and grapefruit juice in a large punch bowl until sugar is dissolved
- 1/2 Cup Sugar
- 3 Cups Grapefruit Juice
- 1 1-liter Bottle Club Soda
- 1 1-liter Bottle Ginger Ale
- 1 1-liter Bottle Collins Mix*
- 1 Jar Maraschino Cherries
- Optional: 1 oz. Gin or Vodka per Collins Glass Serving
- (*If you can't readily procure Collins mix, Fresca or Squirt are good alternatives.)
Sugar Cookies

Cream butter. Add sugar gradually, creaming until light and fluffy
- 1 Cup Butter
- 1 1/2 Cup Sugar
- 3 Eggs
- 1 tsp. Vanilla
- 3 1/2 Cups Flour (sifted)
- 2 tsp. Cream of Tartar
- 1 tsp. Soda
- 1/2 tsp. Salt
Asparagus Fans with Mustard Sauce

Lower the eggs into enough boiling water to cover them and cook at a very gentle boil for 10 minutes
- Mustard Sauce:
- 2 large eggs
- 11/4 pounds large firm green asparagus
- Salt
- 1 tablespoon minced fresh chives, for garnish
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons water
- 1 tablespoon red wine vinegar
- Good dash freshly ground black pepper
Flan With Green Herbs

Preheat the oven to 375 degrees
- FLAN
- 6 cups loosely packed mixed herbs and greens, such as sorrel, cilantro, parsley, chervil, chives, basil, tarragon, and arugula
- 4 cups loosely packed baby spinach leaves
- 1 tablespoon unsalted butter
- 2 tablespoons olive oil
- 1/4 cup pine nuts
- 6 large eggs
- 1/2 cup light cream
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons freshly grated Parmesan cheese
- SAUCE
- 2 pounds ripe tomatoes (about 4 large), coarsely chopped
- 1 tablespoon finely chopped jalapeño pepper (optional)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 tablespoons vinegar
- 1/4 cup extra-virgin olive oil
