Creamy Macaroni and Cheese

Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes
- 2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)
- 4 tablespoons (1/2 stuck) butter, cut into pieces
- 2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese
- 3 eggs, beaten
- 1/2 cup sour cream
- 1 (10 3/4-ounce) can condensed Cheddar cheese soup
- 1/2 teaspoon salt
- 1 cup whole milk
- 1/2 teaspoon dry mustard
- 1/2 teaspoon black pepper
Veggie Frittata With Turkey Bacon

Nutritional Information
- 1 (8-ounce) package JENNIE-O® Uncured Turkey Bacon
- 1 tablespoon vegetable oil
- 1/2 cup finely chopped red pepper
- 1/2 cup finely chopped green pepper
- 1 cup thinly sliced mushrooms
- 1 cup finely chopped asparagus
- 2 cups egg substitute or 8 eggs
- 1/4 cup milk
- 1 tablespoon chopped fresh parsley
- 1 cup shredded low-fat Swiss cheese
- 1/3 cup thinly sliced green onions
Crock Pot Cheesy Chicken, Potatoe & Broccoli

Add all ingredients except for cheese in a gallon freezer bag
- ◦2-4 chicken breasts
- ◦1 large green pepper, chopped
- ◦2 cups broccoli, chopped
- ◦1 lb. red potatoes, sliced thin
- ◦1 tsp. paprika
- ◦1 can condensed cream of chicken soup
- ◦1/4lb. (4 oz.) VELVEETA®, cut into 1/2-inch cubes
- ◦1 Tbsp. Worcestershire sauce
- ◦1/4 cup chopped fresh parsley – (I used dried parsley)

In a large round frying pan, heat oil to 350°F over medium heat
- 1-1/2 cups Gold Medal® all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1 cup whole milk
- 1 teaspoon vanilla
- 5 cups vegetable oil, for frying
- powdered sugar, for dusting
Breakfast Sausage-NSA (healthy)

Healthy breakfast sausage made with ground turkey - YUM!
- 2 lb ground turkey breast
- 1-1/2 tsp fresh ground pepper
- 2 tsp finely chopped fresh sage leaves
- 2 tsp finely chopped fresh thyme leaves
- 1/2 tsp finely chopped fresh rosemary leaves
- 2 tsp brown sugar substitute
- 1 Tbsp Splenda
- 1/2 tsp grated nutmeg
- 1/4 tsp cayenne pepper (to taste)
- 1/4 tsp red pepper flakes (to taste)
- 1 tsp garlic powder
- 2 cloves minced garlic
- 3 Tbsp no sugar added (NSA) applesauce
- Up to 1/4 cup NSA chicken broth, as needed
The Lady and Sons Okra and Tomatoes

Cook bacon slightly. Saute onion and garlic with bacon until tender
- 4 slices bacon, diced into small pieces
- 1 small onion, peeled and chopped
- 2 cloves garlic, minced
- 2 (15-ounce) cans diced tomatoes
- 1 tablespoon chicken base
- 1 tablespoon sugar
- 2 cups fresh okra, cut into 1-inch pieces (may use frozen, if fresh not available)
- Fresh ground black pepper
Pecan Pie Cookies

Preheat oven to 400 degrees
- 1 prepared single pie crust (homemade or purchased, I used Pillsbury)
- 2 tablespoons butter, melted
- 1/2 cup pecans, chopped
- 1/3 cup packed brown sugar
- 1/4 cup corn syrup
- 2 eggs
- 1/8 teaspoon salt
- Optional: 1/4 cup semi-sweet or milk chocolate chips to decorate
Brussels Sprouts with Bacon

Brown bacon in a medium skillet over medium high heat
- 3 slices bacon, chopped
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 shallot, chopped
- 1 1/2 pounds Brussels sprouts, trimmed, small spouts left whole, larger spouts halved
- Salt and pepper, to your taste
- 1 cup chicken broth
Spicy Chicken Nuggets

Wash and dry the chicken breasts and trim off fat
- 12 ounces skinless, boneless chicken breasts
- 1/2 cup low-fat buttermilk
- 4 tablespoons hot sauce (such as Tabasco)
- 1/4 cup whole wheat flour
- 2 egg whites, lightly beaten
- 1/2 cup toasted whole wheat bread crumbs
- 1 tablespoon ground paprika
- 1 tablespoon cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon onion powder
Eggs Benedict - Gordon Ramsey

Makes 4 halves Bring a deep saucepan of water to the boil (at least 2 litres) and add the vinegar
- 3 tbsp white wine vinegar
- 4 large free range egg
- 2 toasting muffin
- 1 batch hot hollandaise sauce (see 'Goes well with' below)
- 4 slices Parma ham (or Serrano or Bayonne)
