Baked Squash Pasta

Ingredients

  • ◦9 oz fresh pasta (I used fettuccine)
  • ◦10 oz butternut squash
  • ◦10 oz of hard cheese ( I used Parmesan, Fontina and Dubliner)
  • ◦Garlic cloves
  • ◦Fresh parsley ( bout 2 tbsp chopped)
  • ◦1 1/2 cups heavy cream

Preparation

Step 1

Preheat oven to 400 degrees.

Cook 9 oz fresh pasta.

Shred the butternut squash and the cheeses.

Finely chop a few garlic cloves and about 2 tbsp fresh parsley

In a large bowl place the cooked and slightly cooled pasta, mix in the squash and about half of the cheese

Add the garlic and parsley

Place the mixture into a well buttered shallow dish

Pour 1½ cups heavy cream.

Top with the remaining cheese and bake in pre-heated oven for about 30 minutes, until the cream is absorbed and squash is cooked.

Cool slightly and serve
