2-Step Chicken Broccoli Divan

In a 9" pie plate or shallow casserole, arrange broccoli; top with chicken
- Entree
- 1 pound fresh broccoli, cut into spears, or 1 pkg. (10 oz) frozen
- broccoli spears, cooked and drained
- 1 1/2 cups cooked chicken, cubed
- 1 can Cream of Broccoli soup
- 1/3 cup milk
- 1/2 cup shredded Cheddar cheese
- 1 Tablespoon butter, melted
- 2 Tablespoons bread crumbs
French Toast--Peach Cobbler

Slice bread into 1" slices, lay flat in an oblong dish
- 8-12 oz. baguette French bread
- 4 eggs
- 1 cup milk
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla
- 3-1 pound cans sliced peaches, do not drain
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 2 Tablespoon melted butter
Quick Shephard's Pie

- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 2 Tablespoons butter
- 1/4 teaspoon thyme
- 1 can condensed vegetable soup
- 1 Tablespoon minced parsley
- 1/3 cup tomato juice or water
- 1 1/2 cups diced, cooked beef
- 2 cups seasoned mashed potatoes
Chocolate-Edged Lace Cookies

- 2/3 cup ground almonds
- 1/2 cup butter

Roasted Potatoes with Garlic and Rosemary

- 1/4 cup olive oil
- 4-5 cloves garlic, smashed
- 1 Tablespoon rosemary
- 2 pounds Yukon Gold and/or red potatoes, unpeeled, cut into large chunks
- Coarse sea salt
- Black pepper
Carrot Cake Supreme

- 1 pkg. carrot cake mix
- 1/2 cup water
- 1/2 cup vegetable oil
- 3 eggs
- 1/2 cup finely chopped nuts
- 1 can (8 oz.) crushed pineapple (undrained)
Pineapple Upside-Down Cake

1. Preheat oven to 325 degrees
- 4 eggs, separated
- 1/2 cup butter or margarine
- 1 cup light brown sugar, firmly packed
- 1 can (20 oz.) pineapple slices
- 1/2 cup coarsely chopped walnuts
- 10 maraschino cherries, drained and halved
- 1 cup sifted cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sugar
- 1 Tablespoon butter or margarine, melted
- 1 teaspoon vanilla extract
- 3/4 cup whipped heavy cream (optional)
