Twice-Baked Potato Casserole (Amy's ?)

- 1 1/2 pounds red potatoes (about 6 medium), baked, cubed, and divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound sliced bacon, crisply cooked, crumbled and divided
- 3 cups (24 oz.) sour cream, divided
- 2 cups (8 oz.) Mozzarella cheese, shredded and divided
- 2 cups (8 oz.) cheddar cheese, shredded and divided
- 2 green onions, sliced
Pull-Apart Rolls

Thoroughly combine seasoning blend with herbs
- 1 bag frozen white dinner roll dough, thawed but still cold
- 1 Tablespoon Morton Nature's Seasons seasoning blend
- 1 Tablespoon oregano
- 1 Tablespoon basil
- 1/4 cup melted butter
- 1/4 cup grated Parmesan cheese
Roasted Asparagus, Mushrooms & Onion

Heat oven to 425 degrees. Line two baking sheets with foil
- 3 pound fresh asparagus, woody ends snapped off
- 1 pound medium mushrooms, thickly sliced
- 1 large red onion, sliced
- 1/4 cup olive oil
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Frittata Primavera

Preheat oven to 350 degrees
- 3 Tablespoons butter
- 1 cup potato, peeled and diced
- 1 cup chopped onion
- 1 cup small white mushrooms, sliced
- 12 oz cooked asparagus, cut into 1/2" pieces; reserve tips
- 1 cup diced ham
- 12 large eggs, beaten
- 1 1/2 cups half and half
- 2 1/2 cups mozzarella, shredded
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese, grated
- 1/2 cup chopped parsley

Turkey Casserole

- 4 cups leftover prepared stuffing, divided
- 4 cups coarsely chopped leftover cooked turkey (about 1 pound)
- 3/4 cup mayo, divided
- 1/4 cup whole-berry cranberry sauce
- 2 cups leftover mashed potatoes
- 1 1/2 cups shredded cheddar cheese
Pumpkin Bisque Soup

Mix all ingredients with a rotary beater
- 1 can pumpkin
- 1/3 cup sour cream dip with chives
- 2 cups chicken broth
- 1 cup light cream
- salt to taste
Tuna Top Tomatoes

Grease lightly a 9 x 9 pan
- 4 large tomatoes, cut horizontally into halves
- 1/2 cup Bisquick
- 1/2 cup shredded Swiss cheese
- 1/4 cup mayo
- 2 eggs
- 2 green onions, thinly sliced
- 1 pkg. frozen chopped broccoli, thawed and drained
- 1 can tuna, drained
Chocolate Cashew Clusters

Place chocolate and butter in a 1 1/2 quart microwavable bowl or casserole
- 12 oz (2 cups) semi-sweet chocolate pieces
- 1/4 cup (1 stick) butter, but into pieces
- 1 1/2 cups lightly salted cashews
- 1/4 cup vanilla baking chips, melted (optional)
Cranberry Mousse Shooters

Reserve a few cranberries for garnish
- 1 pound fresh cranberries--washed and picked over
- 1/2 cup fresh orange juice (about 1 1/2 oranges)
- zest of 1 orange (about 2 Tablespoons)
- 1/4 cup Triple Sec (or other orange liqueur)
- 1 cup granulated sugar, divided
- 1 Tablespoon unflavored gelatin (1 envelope)
- 1/2 teaspoon ground ginger
- 2 each egg yolks
- 2 cups whipping cream, chilled
- 1/2 cup whipping cream, chilled
French Lemon Cookie

- 1 cup unsalted butter, chilled
- 1 1/4 cups powdered sugar
- 2 egg yolks
- 2 teaspoons grated lemon zest
- 1 Tablespoon lemon juice
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
