Preheat oven to 450 degrees
- 1 pound bulk sausage
- 1/2 cup chopped red pepper
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups grated sharp Cheddar cheese
- 1 1/2 cups grated Monterey Jack cheese
- 1 cup ranch dressing
- 1 can (2.25 oz) sliced ripe black olives
- vegetable spray
- 1 pkg. wonton wrappers

- 1 Tablespoon butter

Mac and Cheese (Amy's)

Cook the macaroni according to directions; keep al dente
- 1 box elbow macaroni, cooked al dente
- 4 Tablespoons butter
- 4 Tablespoons flour
- 2 cups milk
- 3/4 pound Velveeta cheese, chunked
- Salt and pepper, to taste
- Sprinkle of bread crumbs

In a large bowl, mix all ingredients together except for butter
- Topping:
- 3 cups flour
- 1/4 teaspoon salt
- 1 cup sugar
- 4 teaspoons baking powder
- 1 1/2 cups milk
- 2 eggs

- 1/2 cup butter, melted
- 1 cup butter (softened, almost melted)
- 1 cup brown sugar
- 2 Tablespoons flour

- 1 1/2 pounds fresh scallops, chopped and cooked
- 1/2 cup sherry
- 1/4 cup chopped onion

- 1 cup mayo
- 1/4 cup lemon juice
- 1 teaspoon dill weed
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
Watermelon Mojitos (Ina Garten)

- 30 large mint leaves, coarsely torn by hand
- 3-4 thick slices of fresh watermelon
- 12 oz. light rum
- 1/2 cup simple syrup

- 2 medium onions, sliced
- 3/4 cup ketchup
- 3/4 cup water
- 3 Tablespoons vinegar
- 1 teaspoon salt
- 2 Tablespoons Worcestershire sauce
- 1 teaspoon paprika
- 1/4 teaspoon pepper
- 1 teaspoon chili powder
