Cauliflower Soup

MOM'S RECIPE! ALL MEASURES APPROXIMATE!
- 1 head cauliflower
- 3 Tablespoons butter
- 3 Tablespoons flour
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 carrot, shredded
- 2 cups milk
- 3-4 oz. cheddar cheese, grated
- 6 cubes chicken boullion
- 1 1/2 teaspoons dry mustard
- Salt and pepper to taste
Stuffed Peppers (Anne's)

Cut off tops of peppers, remove ribs and seeds
- 6 medium green peppers (1 1/2 pounds)
- 2 Tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1 can tomatoes undrained (1lb, 3 oz)
- 1 can tomato sauce (8 oz)
- 1 clove garlic, crushed
- 1 teaspoon basil
- 1 teaspoon oregano
- 2 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 egg
- 1 teaspoon Worcester sauce
- 1 1/2 pound ground chuck
- 1 1/2 cups cooked rice
Carol's Bolognase

Saute the carrots, celery, onions and cloves in olive oil
- 1 1/2 cup carrots
- 1 1/2 cups celery
- 1 1/2 cups onion
- few garlic cloves
- olive oil
- 1 pound ground beef
- 1/2 cup white wine
- 1 large can Italian tomatoes
- chicken stock
- splash milk
- 2/3 pound ricotta cheese
- fresh basil
- Parmesan cheese
- cooked spaghetti
Apple Crisp

Preheat oven to 375 degrees
- Dessert
- 4 cups pared, sliced cooking apples
- 1 cup sifted flour
- 3/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup butter
Dill Sour Cream Dip (Mom's ?)

I THINK I VAGUELY REMEMBER THIS, BUT IT SOUNDS GOOD!
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 Tablespoon green onion, finely chopped (or onion flakes)
- 2 teaspoons dried parsley flakes, crushed
- 1 teaspoon dried dill weed
- 1 teaspoon seasoned salt
Scallop Wrapped with Prosciutto

Prior to grilling, soak 6 wooden skewers in water at least 30 minutes
- 18 large scallops
- 6-9 thin slices prosciutto, cut into thirds or halves lengthwise
- 18 fresh bay leaves
- 1/2 cup Dijon-style mustard
- 1/4 cup Pinot Grigio or Chardonnay
- 1/4 cup honey
Very Strawberry Stuffed French Toast

In a small mixing bowl, stir together softened cream cheese, strawberry preserves and orange zest until smooth
- 1 pkg. (8 oz.) cream cheese, softened
- 2 Tablespoons strawberry preserves
- 1 Tablespoon shredded orange zest
- 4 eggs
- 1 cup half-and-half
- 2 Tablespoons Grand Marnier or frozen orange juice concentrate, thawed
- 1 1/2 teaspoons vanilla extract
- 8 slices Texas Toast-style bread, challah, or another thick sliced bread
- Strawberry syrup
- butter
- Sliced fresh strawberries
- Powdered sugar
Carrot Bake

Mix all ingredients, and pour into a greased 1 1/2 quart casserole dish
- 1 pound carrots, cooked and mashed
- 6 Tablespoons butter
- 4 eggs
- 1 cup cracker meal
- 3/4 cup milk
- 3/4 cup cheddar cheese, shredded
- 1 Tablespoon onion, minced
- 1 Tablespoon sugar
- 1 1/2 teaspoon dill
- 2 teaspoon seasoned salt
- 1 teaspoon baking powder
Baked Stuffed Onions

Cook onions until almost tender, then cut out the centers and chop; reserve shells
- 4 large onions, peeled
- 2 Tablespoons butter
- 1 cup soft bread crumbs
- Chopped parsley
- 1/4 cup chopped nuts
- 1/2 teaspoon poultry seasoning
- S & P to taste
- Grated Parmesan cheese
Shrimp Scampi

1. In a large skillet, melt butter with olive oil
- 2 Tablespoons butter
- 2 Tablespoons extra-virgin olive oil
- 4 garlic cloves, minced
- 1/2 cup dry white wine or broth
- 3/4 teaspoon kosher salt, or to taste
- 1/8 teaspoon crushed red pepper flakes, or to taste
- Freshly ground black pepper
- 1 3/4 pounds large or extra-large shrimp, shelled
- 1/3 cup parsley
- Freshly squeezed juice of half a lemon
- Cooked pasta
