Heat oven to 450 degrees. In a bowl, toss all vegetables with garlic, 3 Tablespoons olive oil, S & P
- 4 Roma tomatoes, coarsely chopped
- 1 small eggplant, unpeeled and cubed
- 1 medium red Bell pepper, seeded and cut into 1" pieces
- 1 large zucchini, sliced into 1/4" pieces
- 4 cloves garlic, minced
- 1/4 cup olive oil, divided
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- cornmeal
- 1/2 pkg. (9 oz) refrigerated pie crust
- 2 Tablespoons shredded Parmesan cheese
Rack of Lamb Persillade (Ina Garten)

1. Preheat oven to 450 degrees
- 3 small racks of lamb, frenched
- olive oil to taste
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon fresh ground pepper
- 2 cups loosely packed fresh parsley leaves
- 1 Tablespoon chopped garlic (3 large cloves)
- 1 cup fresh white breadcrumbs
- 2 teaspoons grated lemon zest (2 lemons)

Raisin Bran Muffins

- 3 cups whole bran cereal (All-Bran)
- 2 cups buttermilk (2 Tablespoons lemon juice + fill to 2 cups with milk)

- CRUST:
- 12 ladyfingers (Savoiardi, available at Italian markets) OR 7 graham crackers
- 1/2 stick (4-tablespoons) butter, melted
- FILLING:
- 3 (8-ounce each) packages cream cheese, softened
- 1 cup ricotta cheese (Polly-O brand preferred)
- 2 cups Dairy Brand sour cream
- 1 1/2 tablespoons vanilla
- 1 tablespoon lemon juice
- 1 cup sugar
- 3 eggs (should measure 1/2 cup)
Blueberry-Stuffed French Toast

- 8 oz cream cheese cut into 1" cubes (or smaller for better distribution)
