Rigatoni "cake"

This recipe was inspired by Martha Stewart
- 1 pound rigatoni
- olive oil spray
- 24 ounces of spaghetti sauce
- 1 pound of ground beef or sausage (optional)
- 2 cups mozzarella
- chopped parsley (about 1 tablespoon)
- freshly grated Parmesan cheese for serving
Bleu Cheese and Tuscan Herb Stuffed Mushrooms

Preheat oven 350 degrees Clean and remove stems from mushrooms
- 10-12 button mushrooms cleaned and stems removed
- 1/4 cup bleu cheese crumbles
- 2 teaspoons Fiore Tuscan Herb Olive Oil
- 2 teaspoons chopped fresh Italian parsley
- 1 teaspoon chopped fresh oregano
- 3 basil leaves, chopped
- 1/4 teaspoon sea salt
- 1/8 teaspoon cracked black pepper
Polenta tart with Gorgonzola, roasted heirloom tomatoes and basil

- 1 cup quick cooking polenta

- 6 ounces Gorgonzola

Buffalo Chicken and Bleu Cheese Dip

My recipe does not use commercially prepared salad dressings
- 4 ounces Neufchatel cheese (or cream cheese)
- 4 ounces bleu cheese crumbles
- 1 cup Mexican cheese blend
- 1/2 cup light cream
- 1 10 ounce can all white meat chicken, drained and rinsed
- 1/4 cup Tabasco Buffalo style hot sauce
- pinch of salt and pepper
Parmesan Ranch Crusted Pork Chop

The Ranch dressing is creamy, the Parmesan bread topping is crunchy and the pork is moist and flavorful
- Buttermilk Ranch dressing:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup buttermilk
- 1/2 teaspoon dill paste (or dried dill weed)
- 1 teaspoon dried parsley
- 1 teaspoon dried chives
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Marinade:
- 1/2 cup vegetable oil
- 1/2 cup buttermilk Ranch dressing (see recipe above)
- 2 large cloves of garlic, peeled and crushed
- 1 tablespoon molasses
- 1 teaspoon anchovy paste
- juice of half lemon
- 6 one inch thick boneless pork chops
- Crunchy Parmesan topping:
- 1 cup freshly grated Parmesan cheese, divided
- 3/4 cup Panko bread crumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons butter

Shrimp Scampi Pizza

Preheat oven 425 degrees Bring the refrigerated dough to room temperature (about 30 minutes)
- 1 prepared pizza dough from the deli (I used garlic flavored pizza dough by Portland Pie Co.)
- Olive oil cooking spray
- 1 tablespoon olive oil
- 1 1/2 teaspoons Italian seasoning
- 5 tablespoons of unsalted butter, divided
- 1 shallot
- 6 cloves garlic
- 24 medium raw shrimp, de-veined, tail off
- 1/2 tablespoon lemon juice
- 2 tablespoons all purpose flour
- 1 cup milk
- 1/2 cup fresh grated Parmesan
- 1 cup shredded mozzarella
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 fresh basil leaves
Boboli pizza with potato & rosemary

- one thinly sliced red potato
- 2 TBLS extra virgin olive oil
- 1/4 tsp granulated garlic

Shamrock Milk Shake

Add first five ingredients to blender Blend about 30 seconds Pour in to a serving glass garnish with whipped cream
- 4 scoops vanilla bean ice cream
- 1 C. Milk
- 2 small green mint candy canes
- 1 TBLS Hershey's chocolate syrup

Quick & Easy Chicken Noodle Soup

- 2 medium carrots, peeled and chopped

- 6 cups water
- 1 tablespoon Tone's chicken base
