Cilantro-Lover's Guacamole

Cilantro-Lover's Guacamole with Red Onion, Lime, and Chiles
- 2 medium avocados (must be perfectly ripe for good guacamole; the flesh of the avocado should barely give when pressed with your thumb.)
- 1 T freshly squeezed lime juice
- 3 T very finely minced red onion
- 1/4 cup very finely minced fresh cilantro
- 1/4 tsp. Ancho chile powder (I used Penzeys.)
- 1/2 tsp. Vege-Sal (or use 1/4 tsp. regular salt)
- 1/2 tsp. Green Tabasco sauce (more or less to taste, or use any hot sauce that you like the flavor of)
Club Sandwiches

Smoked-Salmon Club Chicken Provençal Club Double Pork Club Each recipe makes four sandwiches
- Smoked-Salmon Club:
- 8 slices white bread
- 4 slices pumpernickel bread
- 3 hard-boiled eggs
- Zest and juice of 1 lemon
- 1/3 cup mayonnaise
- 1/2 bunch chives, diced
- 2 ripe avocados
- 1 lb. sliced smoked salmon
- 1 head Bibb lettuce, washed
- Salt and pepper to taste
- Chicken Provençal Club:
- 12 slices white bread
- 2 large green zucchini, rinsed
- 1/2 cup olive oil
- 5 cloves garlic, chopped
- Zest and juice of 1 lemon
- 1 T salt
- 2 tsp. freshly ground white pepper
- 2 chicken breasts, trimmed
- 1 large eggplant, rinsed
- Vegetable oil, as needed
- 1/2 cup freshly grated Parmigiano-Reggiano cheese
- 1/3 cup black-olive tapenade, drained
- 1 T harissa
- 1 8-oz. jar sun-dried tomatoes packed in olive oil, drained
- 1 cup fresh arugula, washed
- Double Pork Club:
- 12 slices wheat or sourdough bread
- 11/2 cups julienned or shredded green cabbage
- 1/4 cup grated carrot
- 1 tsp. poppy seeds
- 1 tsp. white-wine vinegar
- 1/2 cup mayonnaise
- 2 T Dijon mustard
- 1/2 lb. double-smoked bacon or Canadian bacon
- 1/2 lb. thinly sliced ham
- 1 cup watercress leaves, washed
- Salt and pepper to taste
Beetroot, Cottage Cheese and Leek Salad

Drain the beets, and cut into matchsticks or small cubes, if necessary (I had ready-grated beets)
- 400 g pickled beets
- 1 leek, white part only
- 200 g cottage cheese
- freshly ground black pepper

Finhacka löken, pressa vitlöken, finhacka örterna
- 2 schalottenlökar
- 4 msk olivolja
- 4 msk neutral olja
- 2 msk pressad citron
- 2 vitlöksklyftor
- 2 tsk torkad chili
- 1 rejäl knippa kryddgrönt av en sort du gillar eller av olika, tex timjan, oregano och salvia

Ostgratinerad frukostkorv med mos

Det här är en riktig efter jobbet- middag, allt i ett: mos, korv och grönsaker
- Potatismos:
- 4 frukostkorvar
- senap
- ketchup
- 1 burk surkål
- 3 dl riven ost
- 1 kvist persilja
- 1 kg mjölig potatis
- 20 g smör
- 3 1/3 dl mjölk
- salt och malen vitpeppar
- ev lite riven muskotnöt
Rice pudding

Preheat the oven to 150C/300F/gas mark 2
- 100 g pudding rice
- 35 g unsalted butter, plus a bit extra
- 650 ml whole milk
- 250 ml double cream
- 1 vanilla pod, split
- 50 g caster sugar or vanilla sugar
- 6 cm strip lemon zest, pith removed
- A pinch of salt

- 1 gul lök
- 200 g skivade djupfrysta champinjoner
- 1 msk neutral olja
- 1/2 aubergine

- 125 g djupfrysta ärter
- 2 msk ketjap manis (indonesisk soja)
- 1 vitlöksklyfta
- 2 msk röd vinäger
