Tortiglioni med fläskinnanlår, skogschampinjoner, schalottenlök och timjan

Sätt på pastavattnet. Hetta upp smör i en gjutjärnsstekpanna
- 700 gram fläskinnanlår, strimlat
- smör
- salt och vitpeppar
- 4 schalottenlökar, finhackade
- 3 vitlöksklyftor, finhackade
- 1 dl vitt vin
- 200 gram skogschampinjoner, skivade
- 40 gram soltorkade, mjuka tomater, finhackade
- 2 dl vispgrädde
- 4 msk färska, repade timjanblad
- 500 gram tortiglioni
- parmesanost och färsk timjan till serveringen
Cointreaufyllda vaniljmacarons

- Macarons:
- 67 gram skalad och finmald mandel (något mer i oskållad vikt)
- 135 gram florsocker
- 1/2 vaniljstång
- 67 gram äggvita (ca två stycken)
- 20 gram strösocker
- 3/4 tsk citronsaft
- Cointreaufyllning:
- 150 gram mandelmassa
- 25 gram smör
- apelsinjuice
- cointreau efter smak
Jamie's Chicken Tikka Masala

Here's another Indian curry from Jamie's Ministry of Food
- Tikka Masala paste:
- 600 g chicken, in bite-sized pieces
- 2 yellow onions, thinly sliced
- 1 thumb-sized piece of ginger, finely chopped
- 1 red chili, finely chopped
- small bunch of fresh coriander, separated into stalks and leaves (and stalks chopped)
- cooking oil
- a pat of butter
- 400 g (1 tin)crushed tomatoes
- 400 ml (1 tin) coconut milk
- 3 tbsp flaked almonds
- 1 batch tikka masala paste, below
- salt, pepper
- 2 garlic cloves
- 1 thumb-sized piece fresh ginger
- 1 tsp cayenne pepper
- 1 tbsp smoked paprika
- 2 tsp garam masala
- 1/2 tsp salt
- 2 tbsp cooking oil
- 2 tbsp tomato paste
- 2 fresh red chili
- 2 färska röda chilis
- 1 tbsp coconut flakes (unsweetened)
- 2 tbsp almonds, chopped
- small bunch of fresh coriander
- 1 tsp whole cumin
- 1 tsp whole coriander seeds
Foolproof pie dough

The trick to this pie crust is the inclusion of vodka
- 350 g unbleached all-purpose flour
- 1 tsp table salt
- 2 tbsp sugar
- 170 g cold unsalted butter, cut into 1/2 cm slices
- 110 g cold vegetable shortening, cut into 4 pieces
- 60 ml cold vodka
- 60 ml cold water
Macaroni Gratin

- 1/2 pound penne
- 3 tablespoons butter
- 1/2 medium onion, diced
- 2 bay leaves
- 1 teaspoon fresh thyme leaves
- 1/4 cup dry white wine
- 1 cup reserved beef stew cooking liquid or good stock
- 2 cups grated gruyere cheese
Delicious winter salad

This is really nice served with a simple pasta, with leftover cold meats, in a sandwich or with a simple jacket pot...
- 1/2 red cabbage, quartered and finely shredded
- 1/2 white cabbage, quartered and finely shredded
- 2 large carrots, peeled and finely sliced
- 4 spring onions, trimmed and finely sliced
- A few shoots from winter cabbages like kale or cavolo nero, optional
- 1 mug of milk (about 300ml)
- 6 cloves garlic, peeled
- 4 anchovies
- 2 tbsp white wine vinegar
- 6 tbsp extra-virgin olive oil
- 1 tsp dijon mustard
- Handful mixed seeds like poppy, sesame and sunflower
- Small bunch fresh mint, leaves picked and torn

- 4 kycklingfileér
- 1 burk kokosmjölk

- Soyadipp:
- ljus kinesisk soya
- saften från en bit riven ingefära lite limesaft
- en gnutta sesamolja
- svartpeppar

Couscoussallad med chiliräkor

Blanda marinaden och skala räkorna, låt räkorna ligga i marinaden någon-några timmar
- Marinerade räkor:
- 800 g färska räkor med skal
- 0.5 dl olja smaksatt med röd chili
- (alt olja + 1-2 finhackad röd chili)
- 1/2 lime
- Couscoussallad:
- 3 dl cous cous
- 3 dl grönsaksbuljong
- 2 st tomater
- 1 mango
- 1/2 paprika
- 1 rödlök
- 1 ask baby/bladspenat
- Pynt:
- ett par skivor vitt bröd
- fetaost
- flingsalt

- 100 g smör
- 2 ägg
- 2 1/2 dl strösocker
- 1 1/2 dl (90 g) vetemjöl
- 1/2 dl kakao
- 1 1/2 tsk vaniljsocker
- 1 krm salt
