VÃ¥fflor med frisk och god fyllning
- Till servering:
- 75 g smör + till gräddning
- 2 dl iskallt vichyvatten
- 4 dl vetemjöl
- 3 dl vispgrädde
- 2 tsk socker
- bärsylt
- vispad grädde
Tortano

Smula ner jästen i en bunke och lös upp med det ljumna vattnet, olivolja, honung och flingsalt
- 15 gram färsk jäst
- 3 dl ljummet vatten
- 2 msk olivolja
- 1 msk honung
- 1 msk flingsalt
- 2 1/2 dl durumvetemjöl
- 4 dl vetemjöl special
- 200 gram mozzarella
- 200 gram prosciutto
- En näve kärnfria svarta oliver
- 1 kruka färsk basilika
Chocolate Toffee Cake (Dumletårta)

- Cake:
- 150 g hazelnuts, ground
- 65 g sugar
- 1/2 tsp baking powder
- 50 ml white baking syrup (or glucose)
- 100 g egg whites (about three)
- Filling:
- 200 ml cream (35-40% fat)
- 350 g milk chocolate
- 90 g butter
- 1 tsp toffee essence - you can skip this, but in Sweden it can be ordered from Essence-fabriken

Big Crumb Coffeecake with Rhubarb

- For the rhubarb filling:
- Butter for greasing pan
- 1/2 pound rhubarb, trimmed
- 1/4 cup sugar
- 2 teaspoons cornstarch
- 1/2 teaspoon ground ginger
- For the crumbs:
- 1/3 cup dark brown sugar
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon salt
- 1/2 cup melted butter
- 1 3/4 cups cake flour (I was out and used all-purpose and it worked great)
- For the cake:
- 1/3 cup sour cream
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 1 cup cake flour (ditto on the all-purpose flour–worked just fine)
- 1/2 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 6 tablespoons softened butter, cut into 8 pieces.

- Servering:
- 125 g smör
- 4.5 dl våffelmix
- 1 dl havregryn
- 1 msk vaniljsocker
- 1 krm salt
- 4.5 dl kolsyrat vatten
- 1 dl filmjölk
- sylt
- gräddglass

- 2 packages (2 tablespoons) active dry yeast
- Pinch of sugar
- 1/2 cup warm water (105 to 115 degrees)
- 2 cups water
- 1/4 cup molasses
- 1/4 cup apple cider vinegar
- 4 tablespoons unsalted butter
- 1 ounce unsweetened chocolate
- 1/2 cup whole-wheat flour
- 3 cups medium rye flour
- 3 cups unbleached, all-purpose or bread flour
- 1 cup bran
- 2 tablespoons caraway seeds
- 1/2 teaspoon fennel seeds

- 1 packet (approx. 180g) salad leaves
- 3 tablespoons chopped mint
- 2 tablespoons fish sauce (nam pla)

- 2 tablespoons rice vinegar
- 1 teaspoon soy sauce
- 1 red chilli, deseeded and finely chopped, or 1/4 teaspoon crushed chillies
