- 1/2 cup dark molasses
- 1/3 cup coconut oil
- 1/2 cup buttermilk
- 1 1/2 tsp. fresh ground ginger
- 4 whole eggs
- 1 16 oz. can vanilla icing
- 1/2 tsp. fresh ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. fresh ground nutmeg

- 1 1/2 cups Dixie Crystals Light Brown Sugar
- 1/4 cup all-purpose flour (spoon and sweep method*)
- 1 teaspoon baking powder
- 2 cups pecan pieces
- 1 cup shredded coconut, sweetened or unsweetened
- Basic Butter Cream Frosting
- 1 stick unsalted butter, softened
- 3 cups sifted Dixie Crystal Confectioners Powdered Sugar
- 2 tablespoons cream or milk
- 2 teaspoons vanilla extract
- Pinch salt
