Corn Salad

Mix all ingredients together, except Fritos, and chill
- 2 cans whole kernel corn, drained
- 1 bell pepper chopped
- 1-1 1/2 cups grated cheddar cheese
- 1/2 onion chopped
- 1 large jar of pimento's, drained
- 3/4 cup mayo
- 1 bag of chili cheese Fritos
Beef Enchilada Casserole

- 1 1/2 lbs ground beef
- 1 onion
- 1 package taco seasoning
- 1 small can of sliced black olives
- 1 lb grated pepper jack cheese
- 1 package white corn tortillas
- 3 cans mild enchilada sauce

- 1/2 cup butter
- 1/2 pound pancetta, chopped
- 1 cup onions, minced
- 4 chicken breasts, boneless, skinless
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup tomato sauce
- 1 ounce vodka
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 2 cups heavy whipping cream
- 1 (8-ounce) package penne pasta, cooked according to package directions
- 1/4 cup Parmesan cheese, grated
Grated Baked Potatoes

Grease/butter a 9 x 13 glass baking dish
- 1 bag frozen grated hash browns, thawed
- 1 cup whipping cream
- 1 1/2 cup half & half
- 1/2 stick butter
- Lawry's seasoned salt
Mexican Cornbread

Brown all meat together and drain, set aside
- 1 1/2 lb ground beef
- 1 lb Jimmy Dean sausage
- 1 15 oz can cream corn
- 2 boxes jiffy cornbread
- 1/2 cup salsa
- 2 cups shredded cheddar
Honey Glazed Carrots & Parsnips

Add the butter to a large skillet over medium-high heat
- 2 tablespoons butter, melted
- 4 medium carrots, cut into 1/4-inch coins
- 3 medium parsnips, cut into 1/4-inch coins
- 3/4 cup chicken broth
- 5 tablespoons honey
- 1 tablespoon finely chopped fresh parsley
- 1 teaspoon paprika
- Kosher salt and freshly ground black pepper
Creamy Coleslaw

Mix mayo, sugar & vinegar in a bowl and set it aside as you Shred the cabbage
- 1 head of cabbage, shredded
- 1 cup of mayo
- 1/3 cup sugar
- 3 caps of apple cider vinegar

- 1 teaspoon dried dill weed

Three-Cheese Chicken Pasta Bake

Dashing Dish
- 2 cups dry high-fiber penne pasta or whole wheat penne pasta
- 1 cup plain nonfat Greek yogurt
- 1 cup low-fat cottage cheese
- 1 cup spaghetti sauce
- 1 whole large egg plus 1 large egg white, beaten
- 3/4 cup grated parmesan cheese, divided
- 1 cup shredded mozzarella cheese, divided
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley
- 1/2 teaspoon salt
- 1 1/2 cups chopped or shredded cooled chicken breast
Layered Lettuce Salad

Layer in order, keep in refridgerator over night
- 1 head lettuce, cut up in small pieces
- 1/3 cup celery
- 1/3 cup chopped onion
- 10 ozs frozen peas (uncooked)
- 1 1/2 cup mayo with 1/2 teaspoon sugar
- 1/2 lb fried bacon or baco's
- 8 ozs cheddar cheese, grated
