BBQ Rub for pulled pork

Mix all ingredients together and store in an airtight container or baggie
- 1 whole boston butt
- 1 Tbsp ground cumin
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 1 Tbsp chili powder
- 1 Tbsp cayenne pepper
- 1 Tbsp salt
- 1 Tbsp ground pepper
- 1 Tbsp paprika
- 1/2 cup brown sugar
Chicken and Tortilla Casserole

- 10 corn tortillas
- 1 tsp vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 14.5 ounce can no-salt-added tomatillos, drained (salsa verde)
- 2 cups low-sodium chicken broth
- 1 fresh jalapeno pepper, seeded and rough chopped*
- 1/8 tsp black pepper

- 2 pounds boneless, skinless chicken breasts, cooked and cubed

- 2 pounds salted dry-roasted peanuts
- 4 ounces German's sweet chocolate (about 4 squares)
- One 12-ounce package semisweet chocolate chips (about 2 cups)

- 2 Medium zucchini, grated (about 4 cups grated), squeezed dry
- 1/8 cup Low fat cottage cheese
