Raspberry Cream Cookies

Line two cookie sheets with parchment paper
- 2 1/4 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups granulated sugar

- 1 egg plus 1 egg yolk
- 1 teaspoon vanilla extract
- 1 cup frozen raspberries

Risotto with scallops, bacon, and spinach

In a 5-6 qt Dutch oven heat the oil over medium heat
- 2 Tbs extra virgin olive oil
- 4 oz bacon diced small
- 1 small onion diced small
- 2 cups Arborio rice
- 1/2 cups chardonnay
- 1 qt low salt chicken broth
- 1 lb scallops
- 7 oz baby spinach washed coarsely chopped
- 1 cup grated Parmigiano-Reggiano, more for topping
- Salt/Pepper to taste

Quinoa Chicken Chile

1.) Toss everything into slow cooker and cook for 6-8 hours on low or 4-7 hours on high
- 1 cup of quinoa, rinsed
- One (1) 28 oz can of diced tomatoes (you could use crushed)
- One (1) 14 oz can diced tomatoes with green chilies (Rotel)
- Two (2) 16 oz cans of black beans, rinsed, drained
- One (1) 15 oz can of corn, drained
- 3 Cups chicken stock
- 2 large chicken breasts, frozen or thawed (cook longer if frozen)
- 1 tsp garlic powder
- 2 tsp cumin
- 1 tsp crushed red pepper
- 2 tsp chili powder

- 1 scant tbsp. yeast (or 2 cakes - packets)
- 1 tbsp. honey
- 2-3 cup unbleached white flour or whole wheat or mixture of 2
