Spicy Quick-Pickled Veggies

Instructions Pack the cauliflower, carrots, onion, jalapeños and garlic into a quart-sized wide-mouth mason jar
- 1/2 medium cauliflower, florets cut into small, bite-sized pieces
- 2 medium carrots, cut on a sharp diagonal into 1/8” thin rounds
- 1 small onion, sliced very thin
- 2 medium jalapeños, sliced into thin rounds
- 6 garlic cloves, peeled and smashed
- 1 1/2 cup plain white vinegar or apple cider vinegar
- 1/2 cup water
- 1 tablespoon salt
- 2 tablespoons honey
- 2 tablespoon sugar
- 1 1 1 bay leaf
- 1 teaspoon oregano (preferably Mexican oregano)
- Freshly ground black pepper
Marinated Summer Slaw

Combine cabbage, cucumber, green bell pepper, tomato, and green onions in a large bowl
- 1 (10 ounce) package shredded cabbage
- 1 cucumber, peeled and chopped
- 1 green bell pepper, chopped (optional)
- 1 large tomato, peeled and chopped
- 1 bunch green onions, chopped
- 1/3 cup white sugar
- 1/2 cup vegetable oil
- 1/4 cup white vinegar
- salt and ground black pepper
Ginger Shrimp

Place chopped ginger, garlic and green onions in large saute pan
- 1 pound peeled, de-veined, uncooked shrimp
- 1 tablesppon olive oil
- 1 tablespoon butter
- A chunk of fresh ginger, peeled and chopped (2 or 3 tablespoons)
- 1/2 cup sliced green onion
- 1 clove garlic
- 3/4 cup dry sherry
Black Beans

- 1 lb bag black beans, rinsed and picked over
- 1 T vegetable oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 2 tsp salt
- 1 bunch cilantro, minced

Carrots with Grand Marnier

- 6 medium carrots
- 1/8 cup sugar
- 1/4 cup water
- 1/8 teaspoon cinnamon
- 2 tablespoons Grand Marnier
- 1 tablespoon butter
Prosciutto and Goat Cheese Strata

Line bottom of 13x9x2-inch glass baking dish completely with 1 layer of bread, cutting some slices to fit
- 18 slices firm white bread (such as English muffin bread), crusts removed
- 6 ounces prosciutto, thinly sliced
- 8 ounces goat cheese, crumbled
- 4 ounces provolone, grated (about 1 1/2 cups)
- 1/4 cup chopped green onions
- 6 tablespoons thinly sliced fresh basil
- 5 large eggs
- 2 cups whole milk
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 3 tablespoons butter, melted

Parmesan Fennel Gratin

Preheat the oven to 375 degrees
- 3 medium fennel bulbs
- 1/2 cup chicken stock, preferably homemade
- 1/3 cup dry white wine
- Kosher salt and freshly ground black pepper
- 2 tablespoons unsalted butter, diced
- 3 tablespoons unsalted butter, melted
- 3/4 cup panko (Japanese bread flakes)
- 1 cup freshly grated Parmesan cheese
- 1 tablespoon minced fresh flat-leaf parsley
- 1½ teaspoons grated lemon zest
